I'm Maori and honestly compared to island food, our foods bland apart from the smokiness in the hangi when it's done properly (underground) all the rest of the food is just literally ingredients (like a boil up) and salt lmao so yeah junior was right it's something you have to grow up with it's just a sentimental thing to us lolol
Growing up being Half Samoan & NZ Māori, I had the best of both worlds! Got to eat a lot of Islander/Māori even though Maori kai is a bit on the bland side, it's kinda done like that but then we have condiments on the side to suit our taste. My Māori nan always added mint sauce to her boil ups only because that's the blandest of them all but it made such a nice difference! 😋 And yes , it is a thing you grow up getting used to. In my opinion, fob food is on the heavier side for sure 🤣
But as for a classic NZ mussel chowder, it's pretty much onion, mussels, cream & maggi seafood soup mix. You can add a lil bit of curry powder into it too and adjust to your taste 😊
If the hanging is cooked for the proper amount of time, prepped properly and stacked properly it doesn't need salt, everything should taste stronger and more flavoursome. Same thing with boil up, if it's prepped proper it shouldn't need salt. I hope you guys get to try the real deal or come to nz.

I'm Maori but I get down with all Poly food especially Lu Sipi, Oka, Otai and Hawaiian Poke. Also Uga from Niue is Fire!!!. Hangi is cooked with a small amount of salt but boil up not so much we add salt to our food later individually.

Cat Clune I was talking about traditionally and culturally not the past 50 years or today yes salt is added. But traditionally and culturally no. I was also raised by my Maori Aunty. Boil up has been around since 1850s and salt wasn’t formally introduced into Aotearoa until the early 1900s and only the rich pakeha’s had salt. Salt was added into boil up in the early 70s. Many traditional Maori families still don’t add salt. Growing we never needed the salt for boil up we just use to it. My Aunty still doesn’t add salt but I add tiny bit of salt.

Cat Clune I was talking about traditionally and culturally not the past 50 years or today yes salt is added. But traditionally and culturally no. I was also raised by my Maori Aunty. Boil up has been around since 1850s and salt wasn’t formally introduced into Aotearoa until the early 1900s and only the rich pakeha’s had salt. Salt was added into boil up in the early 70s. Many traditional Maori families still don’t add salt. Growing we never needed the salt for boil up we just use to it. My Aunty still doesn’t add salt but I add tiny bit of salt.
