- Starting with the 1K Gritomatic stone, a medium-coarse grit ideal for shaping the edge and removing minor imperfections. Hold the knife at a 15-20° angle and move it across the stone in a controlled, sweeping motion while maintaining even pressure. Alternate sides and continue sharpening until the edge is well-formed. Keep the stone wet throughout the process for smooth sharpening.
Next, refine the edge using the 6K Suehiro Cerax stone, which polishes the edges and gives the luster to the edge. Use the same sharpening technique, but apply lighter pressure to achieve a smooth, razor-sharp finish.
For optimal sharpness, finish by stropping on leather, which further refines the edge. Wipe the blade clean and test its sharpness by slicing paper . This two-step sharpening process ensures a balanced, precise edge, making the knife highly effective for cutting tasks.
