    Michael Ruhlman is the best! I admire and respect him for what he does and of course there is nothing better than LeCreuset to cook in.

    FOR MOST OF MY LIFE OUR FAMILY HAS EATEN THIS AMAZING ROAST. MY GRANNY WAS FROM ENGLAND AND WE NEVER HAD ANYTHING BUT THIS DELICIOUS BIRD AT CHRISTMAS. I LOVE YOUR RECIPE BUT NEVER TRIED IT BEFORE. BUT THIS CHRISTMAS I WILL. SADLY THE LAST ONE I BOUGHT LITERALLY HAD NO AROMA WHEN ROASTING IT AND IT COST $80. CDN. THIS WAS 10 YEARS AGO. MANY THANKS FOR THIS GREAT-LOOKING BIRD.

    You should consider replicating the stew you mentioned in homage to Anthony Bourdain. It may be an amazing way for us to remember him.

    I would be afraid that I would throw my back out getting that filled 15 quart out of the oven, spilling the fatty goose juice down into the gas range and causing an inferno LOL!

      You’re right, very few women could move it safely. When I was a kid my mum had a frying pan she could only lift when empty. 😂

      A lot of evaporation has occurred by then but yeah she is a beast. We love it though it’s the absolute best for fried chicken too.

    my Family used to eat these wonderful Birds every Christmas but the last one I roasted was SO tough and I'd never have guessed anything was roasting in my oven for no Goose aroma was in my Kitchen and the cost of Canadian frozen Geese cost the Earth. but your method of "braising" it is what I do with our Turkeys each Christmas but just try telling this to FB members, they think I've lost my mind. but it comes out incredibly tender and roasts in 1/4 of the time!!

    I have to watch a lot of these videos on the you tube channel---the bonus of doing that is you have a bunch more videos of the same series all at your fingertips in the "side" panel of you tube.

    I live in Canada and have never seen any goose more than 11lbs.this farm has great looking geese 16lbs which makes me very happy.how can I pay and do they ship to Canada..the last goose I had was tasteless and Canadian produced I'm so glad I found your site .....Norm Lor

    Why do so many of the chefs use metal utensil in their le Creuset pots? My dad bought me some le Creuset and told me never to use metal only wooden or plastic utensils

      You can use metal utensils if you use a little common sense. But since common sense isn't really all that common, wood or silicone is safer. Le Creuset themselves say "For stirring comfort and surface protection, Le Creuset silicone tools are recommended. Wooden or heat-resistant plastic tools may also be used. *Metal tools, spoons or balloon whisks may be used, but require special care - they should not be scraped over the enamel surface. Do not knock these on the rim of the pan.* Hand-held electric or battery-operated beaters should not be used. Their blades will damage the enamel. Knives or utensils with sharp edges should not be used to cut foods inside a pan."

    Does the cooking go without any seasoning? Is it just wine and water and only later before roasting the salt from the outside?
    I love the equipment!

    $1,000 USD later, you have a small plate of goose meat and some blanched celery. I guess it doesn’t matter, though, because you presented the goose around the house. Goose parades don’t grow on trees.

    I am doing this and cooked the goose at 180 for 3 hours- absolutely not as cooked as his is in the example. I will have to roast longer tomorrow- I wonder if he is referring to Celcius vs Farenheit? 180 Celcius is 350 Farenheit, which is closer to what I cook a turkey at when poaching Le Creuset goose pot.

      Yes, with minor adjustments for time and temperature. Assuming, of course, that the bird will fit your pot.

    I love this recipe and tried to have a Goose delivered from America to Canada and no go too costly but do you know of any stores where they ship in Canada. I have found out they don't sadly enough because our Geese are very small about 11lbs max and have no flavour. but I have been brought up on this foul and miss it so

      It's 14L (about 15 qt). 19" x 9.5" x 12.5" I have one- they are of course, very heavy! I think it's about 21Lbs empty. IF you get one, check that the shelves in your over can bear that weight. The first place I used it in, I bent the rack!
