Your beds are so nice and long, lots of space - that half and half method is a great way! I do bokashi composting, and am able to add in all the kitchen scraps, including meat, bones, and diary, etc. I bury the fermented pre-compost directly in pots and buried it with some potting mix and a handful of dirt, and can plant ideally after a couple weeks, though I have planted immediately, and it has worked. We have a big rodent issue in the neighbourhood, and so far, so good - they leave the fermented stuff alone. I planted fig bushes in the beds I had used to put the compost in, and they're doing well.
The beds are 12’ long and 4’ wide, and this method has been working for me well over the years … sometimes there’s too much for the pile but it rots down fairly quickly. I’ve not heard of the bokashi method of composting - I’ll have to read up on that. Thanks!
