idk about the mess from frying the chicken breast, but I also wear oven mitts or wrap my hands with a dish towel or something so I'm not as scared of getting burned by the grease. It makes it easier to cook how I need to when I do that.

6:02 try seasoning your pan through boiling water in it 'til the droplets start to form beads. There are tutorials available online on how to properly season a wok or pan

Your videos makes me relax alwayss! Btw, what equipment do you use when it comes to shooting these videos? Like what specific cam and lens ?
Tips when frying something, make sure the pan is dry and there is no drops of water or anything. The oil must be hot enough, also heat it low until it's hot. so you can start frying.
