this naan (bread piece) is eaten fresh because it gets a bit hard after some time and never keep it like this in open they get dry and hard must keep a cloth for covering it up. BTW it's also available in Pakistan not specified for India......

South Indian, North East, etc
India is diverse & so is our food, some regions food is so spicy that we as Indians can't have it either and then there some who use less pepper but the rest of spices are so rich, that they have you all doozy... And some are sweet as they have more of cashew going for it. But barring those regions (1-2) most don't have that spicy. The bread(naan ot tandoori roti) , you guys got, was overdone, it's not supposed to be so hard. And more softer version called 'Roti' is had on a daily basis. And these gravies are just a nano fraction of the variety we have, even in vegetarian stuff...

As a Brit, who has been eating Indian food my whole life, when I tried Indian food in mainland Europe, I thought it was a lot milder in general and with a lot less flavour. It's toned down a lot compared to the UK, as they aren't used to the heat or spices.

I grew up in India and I also like spicy food ... theres Punjabi, Gujarati, South Indian, Marvadi, Kathiyavadi & many more different kind of cuisines you should try out ... also the “Chats” ( like a snacks) that is just yummm... u gonna love there am sure 😊👍🏼

Good of you to try Indian food. You may not enjoy everything, but congratulations for trying. FYI, the Madras curry is from South India, where the spice levels go way higher than north India. Madras is a city, now known as Chennai.
if you feel like the Curry is too spicy, you can just add some butter nor cheese into curry, I hope you guys might be having that already at home.

If u leave the sweets, most dishes are spicy . I can't imagine my life without a eating dish having spices in it. Madrasi flavour mid spicy here. It may be possible there are differences. U should try veg dishes like 'dal makhani', 'Shahi or bhujji paneer', mushroom etc. Also dishes like pav bhajji, Chile bhatoore , bhelpuri etc
if you want to put Nun into microwave sprinkle little water over it before doing so or it will get very hard.
Those nans becomes bitter after sometimes so eat it directly from the kitchen if possible

Prank Khan Indian Korma is sweet in taste and yellowish in colour. Pakistani Korma in light brown and spicy. Both are quite different in taste.
Cumin and other similar things are fried in oil in Indian dishes in the start. In Pakistani dishes onions are fried instead.
Both cuisines are slightly different.

Roti/ bread is over roasted, for spicy/ chilli thing of grevy /curry why u take so much quantity curry on bread . Next time take 1 cup thick curds with any curries/ grevy then add curds spoon by spoon to spicy curry/ grevy according to ur tolerance of spicy then eat . If u r boozer then drink any alcoholic drink with spicy things it removes spicy flavor from tounge/mouth faster than water/any other drinks .good taste next time......
