Very good stuff. Before Russia took hold of eating etiquette in early 19th century, sweet and small savoury things could be served anywhere in the meal. Along with the table side format you mention, the Russians also formulated the current norm of savoury starter, a main, and a sweet dessert or 'a la russe' and posh restaurants still have that distinction today.
