This is undoubtedly the best overview of the three heat sources you've done to date. Much easier to visualize by pointing your IR gun and the convection gizmo at real cookers than the three graphics. It almost makes me think about getting an offset since the convection difference is so huge between it and the KJ. But if I did that, I would have to ask you to put me up in your guest room for an indeterminate amount of time until my wife stopped being mad at me. I have a Big Joe and a Gozney Dome. The Dome doesn't have the floor space or headroom of your oven, but it's still very versatile. I have enjoyed exploring what comes out better in the Dome than in the Big Joe. Roasted veggies have been my wife's #1 favorite. Salmon has come out very well. Not to mention pizza. Keep those non-pizza recipes coming!

yes if you have the damper slightly closed to retain some more heat the smoke vents out the front, need to clean it regularly. bar keepers friend does a good job
