    They begin to oxidize once the air touches them and then turn black/brown. If you put them right into cold water once peeled, they will maintain their color.

    What does the rum do for the flavor? How much is left in the taste after cooking, like is it noticeable? Just curious bcuz kids love my candied yams and I use every ingredient in mines that you have listed except the Rum but I want to def try it with the rum now. Yours look amazing ❤

    Why Do Cut Potatoes Turn Brown?
    When you cut a potato, the flesh is exposed to the air, which contains oxygen. The oxygen reacts with an enzyme in the potato called polyphenol oxidase, causing the potato to turn brown. This process is known as oxidation, and it is a natural response to exposure to air. Additionally, when exposed to air, the potatoes release moisture, which contributes to the browning process.

    I doubt those are 'yams' but are sweet potatoes. the only yams I know of in this country have been imported from Nigeria.

    • @TheDrdawson
      @TheDrdawson 15 годин тому

      Yes they are sweet potatoes. But here in Canada we have called them yams, and I didn't know there was a difference,because growing up we'd nerver seen a true yam. Also according to wikipeda, "Sweet potatoes can also be called yams in North America. When soft varieties were first grown commercially there, there was a need to differentiate between the two. Enslaved Africans had already been calling the 'soft' sweet potatoes 'yams' because they resembled the unrelated yams in Africa.[8] Thus, 'soft' sweet potatoes were referred to as 'yams' to distinguish them from the 'firm' varieties." Thanks for the prompt to look this up. Sweet potatoes are in the morning glory family, while yams belong to the lily family. Yams aren't as sweet as sweet potatoes
