    1 Cup Flour
    1 Cup Brown Sugar
    1/2 Cup almond
    1 Cup mixed nuts ( walnut & cashew)
    1 Cup Rich fruit mix ( you can be generous)
    3 eggs
    150 gms of butter
    1 tsp orange zest
    1 tsp and little more Spice mix
    1 tsp grated nutmeg
    1 tbsp cocoa powder (optional)
    1 tsp baking powder
    1 tsp baking soda
    1 tsp ginger powder
    Pinch of salt
    Spice Mix
    1 small stick of cinnamon
    3 to 4 cardamom pods
    3 to 4 cloves
    1 star anise
    3 to 4 mix of white and black pepper
    You can use all spice here as well
    Blend it in a mixer . ( you can keep this for upto 6 months)
    Method:
    In a blender add the almonds with the skin and the cocoa powder and blend to a fine mix
    In a big bowl add the butter and whisk it till it turns pale.
    Add the brown sugar and mix till the granules dissolve.
    Then add eggs and mix in 4 mins interval till the batter fluffs up
    Then add the spice mix, ginger powder, orange zest, ginger powder and almond and cocoa mixed flour and mix it well.
    Pre heat the oven to 150 degree C for half an hour.
    Now when its all mixed it is now time to add the dry ingredients add the baking soda and the powder with the pinch of salt to one cup of flour and put in n a strainer and sieve it for even distribution.
    Once the flour gets mixed and turns into a thick batter add the fruit cake mix , and give it a good mix.
    Grease the cake mould or take a paper tog proof mould and pour the mix . Leave a little room at the room and pat it gently on a hard surface for even distribution.
    Put it in the oven at 250 degrees for 1 hour and 20 mins waiting time .
    Now take a the cake out . Use a skewer to poke randomly and then drizzle generous amount of rum or brandy .
