- দুধ পুলি পিঠা শীতকালীন পিঠে-পায়েসের মধ্যে একটি জনপ্রিয় ও ঐতিহ্যবাহী খাবার। নরম, ফুটফুটে পুলির ভেতরে মিষ্টি নারকেলের পুর আর ঘন দুধের স্বাদে এটি সকলের কাছেই প্রিয়।
উপকরণ:
পুরের জন্য:
নারকেল কোরা
গুড়/চিনি
এলাচ গুঁড়া
ঘি
পিঠার জন্য:
চালের গুঁড়া
লবণ
পানি
তেল
দুধের জন্য:
দুধ
চিনি
এলাচ গুঁড়া
ঘন দুধ
প্রণালী:
পুর তৈরি:
নারকেল কোরা, গুড়/চিনি, এলাচ গুঁড়া ও ঘি একসাথে ভালো করে মিশিয়ে নিন।
মিশ্রণটি কষিয়ে পুর তৈরি করুন।
পিঠা তৈরি:
চালের গুঁড়া, লবণ ও পানি মিশিয়ে মসৃণ ডো তৈরি করুন।
ডো থেকে ছোট ছোট লেচি কেটে পাতলা করে বেলে নিন।
বেলে নেওয়া রুটির মাঝখানে পুর দিয়ে ভালো করে মুখ বন্ধ করে দিন।
পিঠাগুলো জ্বাল দিয়ে রাখা তেলে ভেজে নিন।
দুধ তৈরি:
দুধ, চিনি ও এলাচ গুঁড়া একসাথে ফুটিয়ে ঘন করে নিন।
ঘন দুধ মিশিয়ে আরও কিছুক্ষণ ফুটিয়ে নিন।
পরিবেশন:
ভাজা পিঠাগুলো ঘন দুধে কিছুক্ষণ ভিজিয়ে রাখুন।
গরম গরম পরিবেশন করুন দুধ পুলি পিঠা।
টিপস:
পুর বানানোর সময় নারকেল কোরা ভেজে নিলে পুর আরও সুস্বাদু হয়।
পিঠা ভাজার সময় তেলের তাপমাত্রা মাঝারি রাখুন।
ঘন দুধের পরিমাণ আপনার পছন্দ অনুযায়ী কমাতে বা বাড়াতে পারেন।
দুধ পুলি পিঠা শুধু সুস্বাদুই নয়, পুষ্টিকরও। শীতের ঠান্ডায় এই পিঠা আপনার মন ও শরীরকে উষ্ণ রাখবে।
Ingredients :
For inside the pitha :
1 Table Spoon Ghee
1.5 Cup Grated Coconut
3 Piece of Cardamom Powder
1 Cup Sugar
3 Table Spoon Powder Milk
For Dough :
1.5 Cup Water
Salt to taste
1.5 Cup Rice Flour
For Boiled Milk :
1 Liter / 4 Cup Milk
1/4 Cup Sugar ( Depend on you )
1 Cup Concentrated Milk / Powder Milk

I’m kind of curious to know what if I steam the pita and freeze it in advance than later when I plan to make this dish ( Doodh puli pita) will it taste good?
I have steamed this pita & kept in freezer and it stays pretty fresh for few months. When ever I wanted to eat it, I just had to steam it again to make it soft. That’s why I’m thinking if this technique will work for milk pita recipe!

সিদ্ধ করার সময় ডো টা একটু নরম রাখতে হবে। নরম না রাখলে পিঠা শক্ত হয়ে যাবে। শক্ত হলে পিঠা বানাতে গেলেও ফেটে যাবে। আমি ভিডিওতে বিষয়টি উল্লেখ করেছি। আশা করি আরেকবার দেখলে বুঝতে পারবেন।

২ কাপ দুধকে জাল দিয়ে ১ কাপ করেছি। তার মানে দুধকে Concentrated Form এ দিতে হবে। দুধের কালার যখন একটু হলদে হবে, তখন দিবেন। আশা করি বুঝতে পেরেছেন।
