Potatoes were added to add extra weight for a small serving size, serve in small cateens or diners... And it was also a thickener for the sauce because of its natural starchy content... The basic Adobo recipe only has... Meat Soysauce Vinegar Garlic Peppercorns Bayleaves Star Anis Corn oil/canola oil/olive oil A little water to help cook the meat...

Another variety of adobo called "Umba" has the same recipe (with soy sauce) but Sugar is added and it's really even more savory. Either Adobo or Umba if you want it more savory, add Oyster Sauce and you'll see you wouldn't do it without. Mabuhay ka Brandi.
Even without the meat you can make adobo with any vegetables of your choice, I swear I mage okra adobo once and it's good. Try Ginisang Monggo, adobo was once an under rated dish like this but it's so delicious. Sauted Mung beans with pork and bok choi since Moringga can be hard to find. You can find recipes all over youtube.

Our version of adobo has no soy sauce and its called adobong puti and we do put potato with it and it taste great☺☺ and im a filipino😊
