- Making Baby Pineapple Curd from start to finish. Enjoy an intense tropical flavour from such a tiny fruit. Forget using the adult pineapples, you have to sacrifice some babies to make it delicious. Enjoy with some pancakes, cupcakes, toast, brioche, crumpets and the list can go on.

Recipe Breakdown
500g Fresh Baby Pineapple Juice turned to 250g of Reduction
2g Pectin Powder
110g Whole Eggs
100g Egg Yolks
85g Caster Sugar
150g Unsalted Butter
*Bring the mixture to at least 82 degrees celcius without boiling, low to medium heat.
*Whisk the butter in at around 60 degrees celcius

Hi thanks for the recipe! Is pectin powder mandatory, or can I substitute it with gelatin powder? Or, can I skip the pectin?
Pectin powder is not mandatory but it help set the curs to a desired consistency. You could use gelatin powder or corn starch, in this case you would be creating a Pineapple Creme Pâtissière which is similar to a Curd.
Can i use regular pineapples? We do have smaller kinds but not sure they’re baby pineapples or just small ones.
You can use regular pineapples.
how it can be made without egg?
You could make it with probably cream and corn starch to get a similar Creme Patisserie consistency
How many eggs equals 110 grams please ?
2 large eggs will measure about 110 or 3 smaller eggs.
