    The "Pulpatoon" that Anna was cooking (starting at 22:38) is what finds it's way onto South African festive tables as "Tur-duc-ken" mostly at Christmastime!

    Since none of the other Germans in the comments have pointed this out, I feel compelled to clarify that Schwarzwälder Kirschtorte is the cake, while Kirschwasser, or Kirsch for short, is the cherry liqueur. The word Wasser literally translates to water, but it was historically also used for distilled liquids such as spirits and perfumes.

    Every time I watch you prepare your recipe I dream of eating
    So I try to recreate the recipe using my own substitute for the expensive champagne with a cheaper version of f wine

    Shallots are HUGE in the UK. Our's are so much smaller....more like the size of a golf ball at the very largest.

      I get some larger shallots in NYC., usually in shops that cater to a Southeast Asian market. They cost about $4 per Lb. I like to fine slice them and fry them crisp to use as a textured topping.

    Well, i am german and we do this cake diffrently! We put starch, flour and little butter in the sponge and we don't mix the cherries with the cream. We put cherries on the sponge and on top cream mixed with the cherry brandy!

    I had to create an original recipe in a cooking course I took decades ago. I made ‘garlic jello’. It’s quite good.
    Lime Jello, tiny shrimp, champagne, garlic juice and crushed garlic. I replaced half the cold water in the jello with champagne and some garlic juice. As the jello is setting I added the tiny shrimp and crushed garlic. I served it with a dessert mayonnaise on top, and caviar when I could get good caviar. It’s a fabulous appetiser, colorful and tasty.

      Sounds like a 1940s-1950s style recipe where jello was new and novel and used in both dessert and savory foods.

    As cute as Michael can be, sometimes I feel like the chefs just go 👀 “Uh-hu, yeah” while he’s telling a story. But I get it! Being a chef you have to do 2 things at once. I know if I was cooking I’d burn everything while I listened to Michael talk.

      Tbf, I've seen Michael told what a saviogn (can't find the spelling for my life) is at least 3 times now, and he always pretends (?) he never heard it and it's incredibly fascinating to learn 😂

    The dish that Anna made to today with turkey, duck, chicken, is now.a bit of a fad dish here in the US called . . . “Turducken.” What is Turducken? A whole turkey, stuffed with a whole duck, stuffed with a whole chicken. en.m.wikipedia.org/wiki/Turducken

      My brother in law made a turducken one year, including wrapping it in bacon and deep frying it. The turkey still wound up overcooked and dry. I think the force meat layering, and roasting as the cooking method, must do a lot to preserve the moisture in the birds.

    A turkey stuffed with a duck stuffed with chicken is called a "Turducken". It's become very popular for Thanksgiving dinner in the U.S..

    I have tried to get a black bottle of the King's Ginger Liqueur for a while with no success. It seems it's not sold anymore in the USA. Are there any places in England that still sell the original? Also, I can't see how it's not fraudulent to place the same name on a bottle of liqueur that is not of the same recipe. If the recipe has changed, then, it is NOT the King's Ginger Liqueur.

      And? Hitler made "Germans" an insult. Great Britain fought against Germany in both wars. Germany was there long before and is a beautiful country with good people. The lineage of the Royal Family is German, Danish, English, Scottish, Welsh and Irish but they are British.
      I find it very odd to dwell on their "German" lineage, when the country is overrun with Muslims and Hindus, etc.

      Chafing dishes had/have a lil fuel section under food to keep food warm, also cloche was placed over serving dishes for transport to dining room

      Chafing dish fuel is stereo today, I'd suspect it was just a flame w/ coal bck in the day, and later fuel as its invented

      I wondered that. Even where they make up two plates they both share from the one. Maybe they have it to photograph for possible edits then the crew gets it? They take it home? There certainly is quite a bit of it.

      I'm disappointed too. I know Highgrove sells, or used to sell, a ginger liqueur, and the idea of it has always appealed to me. I was hoping to discover how to make a home-made version of Edward VII's cordial. ☹

    Looks sumptuous ...maybe I will replace the fish steak with soya slabs beaten & marinated with Nori( sushi leaves sheet,) & garlic ginger pastr ....🔥both the steamed nori sheets & ginger garlic paste nicely blended together with flax powder ,& peanut milk curd .... beaten into the Soya slab & marinated & refrigerated overnight & the butter in the sauce will be replace with a thick nut paste mixed in nori sheet stock .......the cavier_ will be made with portions of the tofu marinate...

    english cuisine is at times bland and often unlealthy. I cook salmon in white wine and shallots and tarragon and white pepper and serve it with butter lemon rind and lemon juice

    When the chef basted the filet of beef in butter to serve to middle eastern kings he violated some guest's dietary restrictions prescribed by faith. Muslims practice halal which is similar to the kosher practices of the Jewish faith. It is an interpretation of the 'Torah or Old testament which forbids serving the flesh of the animal in the milk of it's mother. I hope that the guests did not guess what they were eating. This is really serious to the orthodox practicing persons of the book. There is actually a condominium in Miami which is kosher to the point of having different elevators if you have purchased meet or dairy so that they should not occupy the same space.
