Probably has something to do with the tempering of the chocolate. Iirc you can mess up the structure of chocolate if you don't cool it down the right way/not fast enough.
Properly tempered chocolate has a glossy, prettier finish and a much better snap when broken. That's why the tempered chocolate is the shell of the bonbon -if done without tempering it wouldn't look or have the same crunch when biting into the bonbon
idk why, but the sounds and the way the liquidy chocolate looked, I am immensely uncomfortable. it’s like when u leave ur chocolate in the car on a hot day and it melts and u still try to eat it but it makes a mess. thats the way the first part of this video made me feel.

일정한 온도까지 올려 녹인 초콜릿을 다시 정해진 온도로 낮춰줌으로써 초콜릿 겉면의 윤기를 더해주고 더 견고하게(쉽게 녹지 않도록) 만들어 주는 템퍼링 작업이라고 알고 있어요.
