Thanks for stopping by Zelie. I totally understand what you're experiencing. That happened to me on the very first attempt. 3 months is more than enough time for the fruit. In fact that's a bit long. From my experience, I would say your soil is probably too compact.
Foods that grow under the soil need a much looser environment to produce the fruit. I don't have such very loose soil which would be a good mix of organic matter ideally. So I had to ensure I watered twice per day to make the soil most enough for the fruit to press against it.
Another thing that happened to me due to the dryness of the soil was that the fruit was coming up out of the soil. I had ignored it thinking it was a part of the process. But I was wrong and by the time I tried to cover it over with soil, it was too late.
So now, a combination of the loosest soil possible and keeping it moist enough for the fruit to grow. I also cover over it whenever it forces out of the ground. That had led me to harvest early because I took that as a sign that it was ready. You don't want to allow the water to expose the beet during the watering process, so be careful.
I hope this helps you to assess your own journey. Keep me posted on your progress!
