Have you ever tried Dynamic Trade Routes for Ck3? DTR is very similar to Sinews of War. It has a population mechanic, trade goods system, and I am guessing it is at least a quarter as complex as MEIOU. Just a guess, as I know I have barely scratched the surface of the mod.
