  • This is our favorite homemade granola recipe, which has evolved over time. It's based on a recipe from the Blue Bottle Craft of Coffee Book. Check out the Amazon link for the book which also includes the recipe if you scroll down:

    Here's the way I make mine:
    Ingredients:
    4 cups rolled oats
    1 cup sliced almonds
    1 cup chopped pecans
    1 cup chopped walnuts
    1 cup chopped coconut flakes
    1 tsp. cinnamon
    1 tsp. freshly ground nutmeg
    3/4 tsp. salt
    1 cup sugar (usually a combo of brown sugar and maple syrup)
    1/3 cup water
    1/3 cup canola, walnut, or coconut oil (whatever I have)
    3 tsp. vanilla extract
    Directions:
    Preheat the oven to 250 degrees F.
    In a large bowl, mix oats, nuts, coconut, cinnamon, nutmeg, and salt (basically all the dry ingredients).
    In a small saucepan, combine sugars and water and cook over medium heat, stirring until the sugar dissolves and starts to boil. Remove from heat and let cool slightly. Add oil and vanilla to saucepan. Then pour over dry ingredients.
    Mix well! Transfer to a 13 by 18 inch rimmed baking sheet. Pat down in a even layer. Bake for 75 minutes.
    Remove from oven and flip granola. I like to flip it onto a second baking sheet to keep the chunks mostly together. Cook for 45 minutes longer.
    Let it cool before serving and store in an airtight container for up to 2 weeks.
