    Not quite a sushi bowl, not quite a "deconstructed" makimono roll. Homemade poke is truly its own thing, and it's incredibly easy to make at home. Poke is all about the fish and its marinade first and foremost, the fancy accouterment in a bowl is always optional and secondary.

    as a poke bowl joint owner, I recommend you wait for the rice to cool down a bit. Hot rice on bowl will steam the tuna (which we don't want). cheers papa

      Dude what are you talking about? You obviously have never been to Hawaii. Every Poke place worth their salt pulls the steamed rice right out of the cooker and makes the bowl. The only time I’ve had a slightly cooked fish is when I get Kalua Pig on Tuesday at Tamura’s. That stuff can be a little hot. That’s why poke needs to be cold so you can safely combine with hot steamed rice without cooking. If you own a mainland Poke place you had better head to Oahu for a couple weeks and go around to all the good places and see for yourself. Tamura’s, Off the Hook, Hibachi, Ahi Assassin’s, Pokeway, even Foodland just to name a few.

      I'm with you. I'm from Hawai'i. I was all ready to shit over Josh based on the thumbnail. He still plated like a mainland chain store but this was closer to legit than I expected.

    As someone from Hawaii, I think the extras in found in mainland poke bowl no longer makes it a poke bowl. It is closer to being a korean bibimbap without the egg and korean chili paste. But I have to commend you on the information. Poke needs to be marinated! I've seen mainland pokebowls just drizzle the sauce on the raw fish right before they give it to you. You are ordering sushi salad and not poke at that point...
    Also a correction. Poke on its own is just poke. A poke bowl is poke served with rice.

      Agreed. This is overtly fancy and is more of a deconstructed makimono. The fish should be 1 inch cubes on rice to call it a poke bowl. That said, still great techniques and ingredients. Sadly, I would still have liked to see some oyster sauce in that Ahi marinade.

      ngl this opened my eyes, the "poke bowls" I used to eat in Europe never marinated the fish and I always felt sad about that, thinking my ideas were too fancy, turns out that's how it's supposed to be lol

      @@kittyallstars you are correct about me, my friend. That short, yet very necessary, mention of oyster sauce was missed in my initial viewing of this "tutorial" for Poke. Personally, I would skip all that fancy side stuff and just mix fresh ahi cubes with some sea salt, kukui nut, sesame oil, onions, and some fresh limu. Good clean fish doesn't really need fancy accoutrements. Just simple things to make your stomach happy. J dubs DOES have a very good pro tip tho, which is to let it all marinate. Even sea salt needs some time to melt. :)

    As someone that is from Hawaii I say the first one is the closest thing to it. The herb mix added in kinda throws me off but the marinating part is spot on. I naturally like my cuts a little bit bigger than half inch. If you come to Oahu and go to tamuras, taniokas, or even foodland you will notice it’s never that small unless they running out of fish.     poke/grain bowls are my favourite healthy lazy bulk prep meal!
    you can make it super easy by using a store bought Japanese dressing (usually sesame), frozen edamame and corn (leave in fridge overnight to defrost, salt lightly + paprika and pepper on the corn). optional add-ins: raw or roasted carrots, chilled. if you can't get ahold of sashimi grade fish or it's not in the budget for that week, chicken roasted till juicy, then chilled makes a great alternative. or tofu! i also like to make a miso paste-soy sauce-sesame oil dressing (no measurements just eyeball it till it tastes good).

      Pro tip: if you want raw fish, it does not need to be sushi grade! Just make sure you buy farm raised fish because wild caught needs to be flash frozen to get rid of parasites. (If you have a meat freezer that has a temperature of or below -10 degrees Celsius or 14 degrees Fahrenheit you can freeze your own fish and defrost and enjoy :)
      Or you could just eat whatever fish you want but just be aware if it’s wild caught it can have parasites.

    In glad you pointed out in hawaii the authentic way is more simple with just rice, and your poke sauce looks ONO (delicious).
    The extras definitely elevate it and makes it look more beautiful, good job making your own poke bowl and respecting the original style

    When I lived in Hawaii I did remodels at a resort that had a poke restaurant in the lobby. I literally ate poke for lunch everyday for two years and I'm still not tired of the stuff. Plus they had about twenty different flavor varieties.

      @@abigailandmoongarden The place was called The Poke Shack at the resort Kona Bali Kai. Not sure if it's still there. I moved off island back to the mainland in 2014. I hope it is though. That place was delicious!

    I’m from Hawaii and I gotta say man that looks amazing! I’m happy to see Poke is loved by all. I grew up in fishing/ spearfishing family so I’ve eaten tons of poke and sashimi that was only just pulled from the ocean. I can’t wait to try this out!

      @@TheApplianceDirect Also, My experience is that most fish taste better if you cure the meat in the fridge for a few days. If I'm fishing/spearfishing all day any fish I eat straight out of the water tastes good to me.

    I made that tuna marinade today for some aldi tuna steaks--boy. That was incredible! I used edamame, lettuce, brown rice and some nuts in my bowl, cause that's what was kicking around in my fridge. Truly an awesome recipe and the first I've ever made from you--time to check your channel and decide what to make tomorrow :) Thank you!

    Proper Hawaiian poké: my favorite kau-kau (snack) truck served it with Kewpie Mayo, seaweed salad and a sprinkle of sesame seeds. Avo was 50 cents extra. The best ever. They also made it with swordfish, but that was 40 years ago when swordfish wasn’t endangered and almost jumped on the boat. XLNT video. My local grocery used to sell poké ready-made for $8/a pound, but who knows what they put in it? Home made is better, cheaper, and more delish. 1lb of salmon or tuna is around $10/lb, and serves 4-6 as a first course or appetizer. Killer!

    Haven’t watched this channel in a few months. I used to watch it together with my mom and we loved all the videos 🥰 She passed away in December and it has been hard to watch the channel without her🥺. I’m glad I’m back because it brings me so much joy 😊

    Been making self-taught poke bowls at home since, well, since I tried some poke bowls in college a couple years back and wanted to emulate them, and I can say that this is going quite over the top to make something that is rather simple to make. All you do, for tuna or salmon, is some soy sauce, lemon juice, honey, and a bit of sesame oil and the marinade is basically perfect.

      If you use it for fish, may I suggest adding a touch of mustard to the mix? The sweet with the snap of mustard is really good (I had a salmon recipe that called for it as a glaze in the air fryer, and it was so good).

    I love a spicy tuna poke, but I typically chop my cucumber and avocado in the squares also for easier consumption of getting every taste in a bite, also I always top poke with sesame seeds, feel like that and seaweed are a requisite

      @@Louisiana666 essentially, it’s just rice and poke. I think once it got to the mainland people added more salad things and less fish, due to shipping cost for fresh ahi. Regardless, I’ll always be spoiled getting a poke bowl for 8$ with rice and a layer of just fish.

      @@atsukorichards1675 first off, donburi usually don't have avocados on them. Or oranges. And they're usually served in a smaller but deeper bowls. Poke Bowl is much more tasty in my opinion.

    I make a poke bowl (or something very similar) they tuna and a ponzu sauce that “cooks” the tuna! With rice, lettuce, avocado, carrot, bell pepper, edamame beans and radish! It’s super good, topped with nori pieces and toasted sesame seeds!

    Imaging dirtying two large kitchen items just to RINSE rice. this is how you know josh hasnt done his own dishes for a long time. just rinse the rice in the rice cooker insert

      Eh, just depends on your preference. I know some people find it easier to wash it in a sieve. I used to do that for years until I finally got to the point where I mastered not losing a quarter cup of my rice in the drain every time I rinsed it while washing it directly in the pan 😂 and then finally got a rice cooker so I wash it in the insert now

      As long as I have to do dishes anyway, it never bothers me to wash an extra one if it makes the cooking more efficient. I don’t love washing dishes, but one more doesn’t make much difference.

      The rice cooker insert is non-stick; sloshing the rice around could scuff the non-stick coating. That's why you should always rinse your rice in a separate bowl or colander.

      @@bsquad12345 I've beendoing it this way weekly for nearly 6 years and my rice cooker insert is in pristine condition still. I promise the rice grains scratching the Teflon coating is not an issue.

      @@Silentgrace11 some people use a rice washing bowl. Especially in Hawaii where these small Brown bugs get into the pantry and in every dry item they can find. They even eat cardboard and the inner bag for something like cake mix. So some people want to wash the rice real good and use the rinsing bowl

    Good stuff. In the Hawaiian language the name for poke came from the style of cutting which was called also called poke which literally just means diced. Keep up the ono recipes.
