Don't use steam to proof in the APO if you care about the temperature. Steam requires running the fan, which creates heat from friction, so you will not be able to maintain that 77°F temperature (as we can see in your video). It can add up to 10°F over time. Just cover the bowl with Saran wrap and don't run steam/fan.
Thanks for the tip! I may have to do a comparison video. Overall, I think the proofing temperature was fine, but next time maybe I’ll just reduce the proof time.
