    All that creosote flaking off when you put them on the grill. Not good!

      The black spots? That is the blood cooking out. You can see them start to form when I let the ribs sweat after applying the rub.

    How much of a difference is there between your temp probe and the one that comes with the smoker?

      I'd say about 15-20 degrees

      @@eikenbbq9023 Thanks for the reply. I just bought a Oklahoma Joe and have done two cooks on it so far. I need to invest in a meat probe. I assume the temps on the smoker run hotter than the temp gauge that came with the unit show?

      Yes, it was never really enough to affect my cooks but I prefer the certainty of a probe.

      You won't be disappointed! I use the Bronco about twice as much as my other pits, it's easy to use and produces great results.

    Great insight on this grill. Is the just the bronco or bronco pro? How many racks of baby backs can you fit on grate? Thanks, I appreciate you!

      This is just the Bronco. On the grate I can fit 3 racks. I picked up a weber kettle grate as well, this allows me to cook on different levels with both grates, will hold around 6 racks with that setup.
