Why do you bring water in from off shore?

Saltwater fish can absorb fresh water and makes the meat turn gummy or mushy. We add the water to our ice from way offshore in deep blue water. It also keeps them colder. A lot of times we will clean our fish the next day depending how hard we are pressed that day and it keeps them fresh.
