we make something similar in barbados. when i make a big batch like yours i put it into the old fashioned ice cube trays and freeze it. i then put those cube in a zip lock bag and when i need the seasoning for a recipe then i just remove as many blocks as i need. love your videos btw.
Love your videos, here's my tip, put green seasoning in zip lock bag, press out air, zip bag, flatten zipped bag, freeze, when you need some seasoning, unzip break off what you need, zip back up return to freezer. We call it Sofrito in Puerto Rico. instead of hot peppers we use small sweet peppers called acitos and cabenelle peppers and lots less water. It sure does wake up the flavor in any savory recipe 👍👍👍👍👍👍
We do the same in the Haitian culture. we call it apiece, which means spice sauce in Creole, but I will defiantly add Shadon Beni and see what flavor it gives. I love your videos. I have made great Trini dishes with your videos : )

My mom cooks hers and puts salt to help preserve it. It stays good in the fridge for a long time. Also, she does not use lime juice or vinegar. She does this so we can put the green seasoning in callaloo without it separating!
The street food in Trinidad is akin to indian roots like puri chole etc. Even mauritius street foods are almost like trinidad street foods. In mauritius, you see a guy with bicycle selling dholl purie around the street corners. Behind his biks is a small glass steel trunk which is a mini restaurant by itself. very nice video, just 2 suggestions, use the medium size processor jar (it holds a lot, stuff the jar with the ingredients) on a NINJA no liquid needed or very little, a few pulses and it's chopped, done, finished, if you want it finer tap a few more times, it'll be liquid, I don't like it so finely chopped. Freeze in a zip lock bag, flatten out the seasoning in the bag first, it'll be easier to break off as much as you need, zip back up without defrosting the whole bag or having to chip it out of a container.

Sounds like you were struggling towards the end there with the blended scotch bonnets (5 after-all!!!)they can be really overwhelming. The pimentos are a real rarity here in Europe, although I can find them from time to time. Thanks for posting and keep those recipies coming :D

You can't definitely freeze the tamarind chutney and green seasoning. If you put vinegar or any types of preserving agents in the pepper sauce then you can leave that in the fridge.

ONeil Buchanan might be called culantro but you can substitute it for cilantro

I make it over here in the USA Trini style, but I make mine a bit hot and spicy I put deferent spices ,got to try it your way

storing it in plastic will make it spoil faster. you really should be using a glass mason jar. It will stay fresher longer.
