Yes, it does. When you go into the Dragon Age Keep, you can have it say that Fenris died in the final battle and that Aveline did not stay with Hawke. I don't know how much of the Keep decisions actually translate properly into Inquisition cause certain things are set in stone. I had an Aggressive Blood Mage Fem Hawke but when I plugged her into the Keep, she was vehemently against Blood Magic in Inquisition, and I was like "Girl, hypocrite much?" xD
If you are playing as a Mage and made Carver a Grey Warden, he'll join you in the final battle, so you can also have him as your Tank if both Aveline and Fenris leave you. He gets a lot of ability points and stat points you can spend on him at that point in the game, so you can build him into a proper Tank.

Fenris pro I like Bethany more than Carver as well, but I like Hawke as a Mage for story purposes, so I usually end up being stuck with him. Although, his attitude is a lot better if you make him a Grey Warden instead of a Templar, so I usually go that route.

No, because if you have a high friendship with Aveline, she will stand by you right away if you choose the Mages. You need the Aveline rivalry and support the Mages in order for her to turn on you, but she will not rejoin you. Fenris will leave you if you support the Mages; however, if your friendship is high, he will come back to you.
I believe you can also have a maxed Rivalry with Fenris to get him to stay with you. In the 1.05 Patch, you can actually get Anders to realize he's a monster with maxed Rivalry and get him to join you if you side with the Templars.
Okay, so even with a maxed Rivalry, Aveline can still side with Hawke. To get Aveline to turn on you, you need to make it so that she ends up resigning from the Guard in Act III and basically ignore her personal quests and be a complete jerk to her.
It depends how you treat her throughout the game. If you don't score enough Friendship or Rivalry points, and you ignore her personal request, don't have her marry Donnec, and get her to resign the Guard, she'll most likely turn on you during Final Straw (provided you sided with the Mages). Siding with the Templars is automatic Aveline support, no matter how good of a relationship you have.
