If you add a jar of pepperoncini and its juices this is called Mississippi Pot Roast where I live. I see you also made it my way with a packet of Keto Chow Beef Base instead of the Au Jus Gravy mix (had to last time because I couldn't get the packets) and it worked really well. So delicious. I do it in the instant pot in 90 minutes and leave it on Warm setting all day until I get home from work. We all love it. My only change to this is adding the pepperoncini, it adds a brinely flavor to the meat. Can't be beat.
I make Mississippi pot roast regularly, and as you mentioned, I add the peperoncini peppers, they add such a great flavor! The only downside I see is the unnatural FD&C Yellow #5 food coloring, and metabisulfite. But your comment is spot on, when I watched Steve's video, I thought, "this is Mississippi pot roast" without the peperoncini peppers. 😄

I used to make the McCormick one all the time, I knew it as "Mississippi Pot Roast". Pre-keto I would dredge the roast in flour seasoned with salt/pepper and brown all sides prior to slow cooking. I would also add 5 or 6 Italian pepperoncini and a little of the juice. Post keto, my sister gave me a recipe with homemade ranch dressing (with the mayo) - I use Primal Kitchen avocado oil mayo, and now I dredge in either unflavored protein powder or egg white powder seasoned with salt and pepper, and brown all sides prior to slow cooking. Can't wait to hear about your Taco and Tomato Basil experiments, as I have some of both flavor I need to use.
Regarding "holding on to more fat" that makes sense since the acacia gum in the keto chow allows the fat and water to mix and it would incorporate better into the shredded beef.

Funny you came out with this video today. I make pot roast/shredded beef the same way. The only thing I do differently is I use some "Better than Bullion" beef instead of the Au Jous (about a tablespoon), and I use your recipe for ranch powder. I also throw radishes into the pot to be my "potatoes" and we throw in some cherry peppers or pepperoncini peppers. In fact, I'm doing this with 3 roasts tomorrow for a dinner party for 8. :) I made this a couple of weeks ago for a test run and it was amazing. Great idea on the Keto Chow, I'll have to try that.

Ooh, Mississippi roast is a long-time favorite here! I've always used the NY Times Cooking recipe, omitting the quarter-cup of flour and mixing in a tiny bit of xanthan gum at the end. I've always used the Buttermilk Ranch mix from Penzey's, even though it has a wee bit of sugar. I can't wait to try your Keto Chow version!

As someone else mentioned, I've heard this called the Mississippi roast. I've seen it for a while but haven't tried it yet, I'm not a big fan of ranch seasoning but my husband would probably love it and I have just recently found a clean ranch seasoning. I really should make this for him....
I wonder if we put a splash of cream in there if it would make it creamier. The Mississippi version has pepperoncini's in it. I wonder what that would add or if it needs it. I have the keto chow base and I have the clean ranch so I think we're going to give this a try this week! I've really gotten into making similar style chuck roasts lately. I brown it in my Le Crueset Dutch Oven, add the seasonings & 3 whole Pepperoncini, then pop it into a 300°F oven for 4-6 hours, depending on size. (I'm Crock Pot avoidant. lol). I make this on busy or cold days. It truly is set it & forget it. Leftovers make really good Enchiladas using Ketogenic Woman's Carnivore Noodles as a tortilla replacement, a little salsa, fresh cilantro and onions. Costco's white queso and sour cream are perfect toppers.

Yes, the carb count seemed high to me too when starting this WOE years ago & making the Mississippi pot roast here so I have halved the “dirty keto” packets too. But, NEVER cut down on the 4 ounces of KerryGold butter. I will however try the KetoChow beef powder & your ranch spice mixture. We do love the little kick of the jarred, 6 whole yellow peppers in ours.

I do something similar. But I cook a larger amount of beef longer. 24 hours does amazing things to this type of cook. It is brilliant with extremely cheap cuts. I made it with cheek meat I got from Sam's. I plan to use a roast and the cheek meat next time. I have used the same method for cooking leg of lamb.

I picked up a mock tender cheap at Walmart and am going to try this recipe . Going to try George Washington's Rich Brown seasoning, I found on " Not Another Cooking Show" Mostly MSG.
In my opinion, if a person doesn't have an MSG sensitivity, it's a wonderful ingredient. I once saw a quote to the effect of "it makes good food taste great, and great food taste mindblowing".
💜🥰🤩🤗 There is a 'bottled' (about 2 inches tall, cutest little jug) AuJus, it is not AS BAD as the packaged stuff, when it comes to the ingredients. I love Terry's shirt❣❣❣
The issue, I've found, is that any commercial bouillon has maltodextrin or other fillers that aren't clean keto. A person could buy freeze dried beef from a camping or prepper/survival site and run that through a spice grinder to make powder, but I don't know how well it would then dissolve in water to make an au jus.
@@SeriousKeto Don't tell anyone, but I am no keto purist. I do cook mostly "from scratch", but that's because I can't afford those fancy packaged low carb items. Uh, oh, I hear sirens!

I have made this recipe many times. I add onions on the bottom and I fry up mushrooms and add them. Now to look up your recipe for HVR dressing mix😊

Transfer the roast to a large bowl and use a hand mixer to shred the meat, you can do the same for chicken. Easy shredding.

I picked up a mock tender cheap at Walmart and am going to try this recipe . Going to try George Washington's Rich Brown seasoning, I found on " Not Another Cooking Show" Mostly MSG.
In my opinion, if a person doesn't have an MSG sensitivity, it's a wonderful ingredient. I once saw a quote to the effect of "it makes good food taste great, and great food taste mindblowing".

There is a 'bottled' (about 2 inches tall, cutest little jug) AuJus, it is not AS BAD as the packaged stuff, when it comes to the ingredients.

You got me to thinking. If I can make my own ranch powder from your recipe, I bet someone has a diy au jus powder recipe. Sure enough.
The issue, I've found, is that any commercial bouillon has maltodextrin or other fillers that aren't clean keto. A person could buy freeze dried beef from a camping or prepper/survival site and run that through a spice grinder to make powder, but I don't know how well it would then dissolve in water to make an au jus.
@@SeriousKeto Don't tell anyone, but I am no keto purist. I do cook mostly "from scratch", but that's because I can't afford those fancy packaged low carb items. Uh, oh, I hear sirens!
@@SeriousKeto I just looked at the Au Jus packet. Dextrose and corn syrup, among other things. Six of one, half-dozen of another. At least, I will save money making my own. Don't you think?
