An extremely critical info this video totally misses out is the fact that Compound chocolate has artificially added hydrogenated vegetable oils, derived from oils like palm oil, kernel oil etc , it's like mixing "Dalda" or "Vanaspati" with pure chocolate which has been given the fancy name of "tempering". This makes compound chocolate EXTREMELY UNHEALTHY and high in Trans Fats, even though it looks more convenient to use due to texture, high melting point etc. Hydrogenated vegetable oils are one of the most UNHEALTHY fats, and avoidable as far as possible, cause high cholesterol, high triglycerides and heart blockages in the long run. On the other Hand pure dark chocolate has naturally occurring Cocoa Butter and no added dalda/ hydrogenated oils which hands down makes it a much healthier option and is also more expensive than compund chocolate for obvious reasons. Mothers must know this difference and avoid using compound chocolate in baking on a regular basis if baking for your children n family. Ofcourse in commercial baking, compound chocolate is rampantly used coz it's easier to use, gives desired texture etc, and costs much less, so gives higher profit margins (at the cost of customers' health and well being of course!! But who cares? 🤷🤷)

If u want to temper chocolate. U need to cool down chocolate upto 40c then cool more upto 28-29 reheat only upto 30-31 then cool down again to 28 29 30 then freeze quickly. You will get tempered chocolate.
They both contain almost equally amount of sugar but you will find compound to taste sweeter & chocolates bitter specially above 45%, bcs of cocoa mass.

If you like bitter then Chocolate, if you like sweet then compound. You will only know once you taste the difference also it differs from person to person.
Hey i can suggest you. If you are using doubel boiler see if you pot is touching the water if it touches the water it will become soft and curdel so make sure that your pot it above the water and it only get steam. And in oven make sure you less the temperature so it will not become soft and curdel it will melt

Compound is basicaly a mixture not pure form of chocolate whereas dark chocolate is pure choocolate. Compound is already tempered wheras dark chocolate needs tempering Compound is on sweeter side whereas dark choclate is on bitter side Compound does not melt easily on room temparature whereas dark choocolate melts easily Hope this helps :)
