I see lots of possibilities with these also. You could roll the filling around a nut of some kind, or a piece of non keto dried fruit, or coconut, etc. Some are even using dried sugar free cranberries. Your imagination could go wild in making these. I love giving gifts all year round so this would be a lovely way to do that. Thank you for sharing.
It’s so funny because at thanksgiving I wanted to experiment by making a fudge out of Lily’s chocolate and literally made it just like your filling with the addition of some butter in the cream. I just put it in a pan and cut in squares and it turned out great!! Now I need to try these truffles and impress my family!
@@jkabholat It literally turns to fudge on it’s own lol, just the chips and heavy cream…learned this the hard way when it seized up as I was trying to dip the truffle filling in it. You might be able to just eyeball it adding cream until you feel it’s a good consistency.
@@jkabholat it’s pretty much the same method and ingredients as her truffle filling, I just put a couple tablespoons of butter in the cream as well. I poured it into a square pan lined with parchment and let it cool and cut into squares! So simple.
For some reason I thought of Lucy and Ethel working at the candy factory while watching. Your truffles look great, I will give it a try. Thanks for sharing.
I just made these with sugar free/zero carb NutPods Oat Creamer and they came out fantastic! I also left out any extract since I wanted just chocolate. So this recipe should have a giant WARNING label on it!!! I am usually a very disciplined keto person and was making these for Easter this weekend and I couldn't stop myself from licking the spoon/fork when done and then scraping the bowls when done! The leftover melted chocolate after dipping was too good to resist. OMG is all I can say!
Generics are often just as good as name brand products. It's ok to experiment, and try to save money; I think the cook shouldn't experiment with unknown brands when it's important to provide the highest quality. These truffles look great! Thank you.
I wondered about this with all the no sugar added chips!! Thanks for testing this for us with all your truffle experience this also offers a lot of background knowledge!
Yum!!! You are so talented!! From savory IP goodness to PSMF bread magic to candy making!! Perhaps offering hands on workshops at the farm will be in your/our future!! Happy Holidays to you and your family!!
These are perfect! I made 3 varieties of these for Our Christmas Eve family get together so I would have a dessert to eat. A few non-keto eaters tried and enjoyed them them as well! Thanks so much for this!
Thanks for opening my eyes to the Lily's chocolate chips! After the holidays I'll get a bag of them and try them along with the monkfruit and erythritol sweetener to my normal chocolate chip cookie recipe! Speaking of freezing things, I made another batch of dates and froze them. They've frozen well! I just nuke them for 20 seconds and they're amazing again! Thanks for that recipe too! Best wishes to all of you including your pets and all the chickens!
They looked so pretty 🤩. I’ll save this one for next year for sure. Trying hard to get in the next decade by the end of the month. These for me would be dangerous right now. I wanted to wish you and your family a very Merry Christmas.🎄🎁
The ChocZero chips are my favorite, by far~ they quickly bumped out every other brand. I'm now making my own white/milk/dark/flavored chocolate for baking & recipes ~ & there is no way I will ever go back to buying them =) I was intimidated by it at first, but it's truly so easy~ not to mention, far less expensive. Great share Nili~ truffles are the best gift ever, since everybody loves truffles! Merry Christmas, & God bless your family =)
All kinds of possibilities.. matcha is good for keto so white chocolate matcha .. matcha works with chocolate in general. .... especially dark chocolate. I could see a blueberry on top or a sliced almond or I'd even try caramel extract or almond extract or such.
I feel it’s my civic duty to warn others here lol, I attempted to make some lemon and white chocolate truffles this morning using the Lily’s white chips…I ended up with about 9 decent looking ones out of 20+ and it 100% was not worth the dumpster fire mess it took to get that decent 9 - the chips melted beautifully briefly lol then separated into a semi waxy lump with a buttery puddle underneath, I had to roll each ball multiple times on paper towels to remove the leaking greasy liquid, it also seizes up incredibly fast even when kept warm for dipping. Maybe it was me, but I would recommend avoiding the white ones (they also taste weird compared to the chocolate ones in my opinion).
Love the truffles!!! I am definitely going to make some! Thanks so much for the recipes and tips. Hope you and you family have a beautiful Christmas and Happy New Year!!😊❤️💋
Hi - I found you via Steve @ SeriousKeto. I have a couple questions ... 1. Do you provide macros for your recipes? 2. How can I create a login for your Wordpress recipe site?
Thank you so much for this recipe! I have been using the bags of dark chocolate from Costco- Bake & Believe brand. They've always melted wonderfully. I made fudge the other day with the same chips, and they turned out lumpy, crumbly and dry. Melted in microwave as always, same amount of time. Made the truffle recipe with this Semi Sweet and Milk Chocolate of this brand now, and they never got really smooth, and they separated and were oily. What is happening? Why are they not working well now? I have to say, the mixture tastes incredible even when its separated, not smooth. I used orange extract in them. They are in the fridge to get ready to roll into balls now. Hopefully they'll do well. Any suggestions on why the chips are suddenly doing this? I'll get some Lily's for the next time, which there definitely will be! Thanks. Merry Christmas to you all! 🌲
Thanks for these options. Any concern for the articial and natural flavors found in the flavorings that you use? I know they aren't optimal but wanted to get an idea of your handling with them.
Have you ever noticed your chocolate seizing when you add in the extracts? My daughter and I were doing truffles a few years back and had that happen with orange flavor, I was guessing may have had water in it, but not sure if citrus may have done it.
I love this recipe idea. I just made them yesterday and used Orange and Rum flavorings. Who knew Orange would be so yummy. The only problem I had was that the melted chocolate started getting hard again before I finished dipping them I tried reheating in the microwave but it only got harder. Is there a secret to keeping it melted while you are working on them.
I don't usually have a problem putting them in the microwave for a few more seconds to soften again. Maybe the chocolate got overheated and that changed the consistently 🤔❤️
New to eating low carb / keto. I ended up making a keto lemonade recipe with real lemon juice and it was delicious however squeezing the lemons was tiresome and expensive. I A thought crossed my mind about using Lemon juice and koolaid lemonade to make It easier. This led me to making orange koolaid with sweetener for a fruity drink which led me to pondering ideas about making jelly or some desserts with diff. Flavored kool aid. Has anyone done this or experimented with this idea??
*It's incredible that something so decadent can fit into a keto lifestyle. It's going straight to my favorites!*
Those look so good. Thanks for making them keto/diabetic friendly. There are four of us in my family that are diabetic.

Mmmmm...maple 🍁 😋
I like the Lilleys choc...these look great...
Choc Zero doesn't use the erythritol and I find I don't have the digestive issues with that brand, just for your viewers reference.
I still need to try them!
We have resorted to calling Lily's as "tooty chips" We love them but not the gastric distress.

I would like to try incorporating some fresh goat cheese in the filling.

It's not something I worry about. I do go for pure extracts when available but this kind of thing makes up a very tiny percentage of my diet ☺️

you coud just roat some haselnuts, chop them finely and toss the truffels :)
