I think whatever Sabine's journey will be, it could be wheather or not she would decide if she needs the force to become a Jedi or that she could enough without it. Ahsoka even stated she wanted Sabine to be herself rather a Jedi and considering Sabine's character, her personaility seems to imply an idenity crisis not just her Mandalorian Heriatgae and her desire to be a Jedi like Kanan and Ezra, but also her own indivduality, likely explaining why she changes her hair and armor colors, implying she never settled on who she is or who she wanted to be as indivdual.

Something tells me her value to the Empire is bigger than just being a genius prodigy, enough that it could've drawn the attention of the Inquisitorius, no doubt they were the reason she left her home. Not to mention, even training with Kanan how to use the Darksaber also foreshowed this. Though, there might've been foreshadowing of her falling to the Dark Side at some time, due to three owls being present, two very close to each other representing Kanan and Ezra (being master and appereintice), with the third representing Sabine being at a distance, implying her being a late bloomer in the force as well a possible fall to the Dark Side. Another example is when she was taken over by one of the Nightsister's ghosts. If anything, Sabine is often compared to Anakin, due to the desperation built out of love as well as grave conseqence, hence why Ahsoka decided to train, only to stop for the same reason, only to train her again in the hopes she can be propably ready, though not because Ahsoka wants Sabine to be a Jedi, but to better know herself and what she could be capable of.

I think you're putting too much faith in the the mechanical abilities of a fighter that was designed to be cheaply mass produced and then left idle for a decade. Frankly, they're lucky to be flying at all.
