we are using Aquafaba in this
Aquafaba is the liquid from chickpeas
Recipe
Aquafaba from 1 Can or 120 grams
200 grams Sugar
300 grams Butter
you can always double the recipe or halve the recipe it works fine.
Hi, can you use this under fondant? Is it as stable as swiss meringue buttercream made with eggs?

Hi Sonam! Love the idea of an eggless meringue buttercream. Can this method be used for an Italian meringue buttercream?
not sure, italian meringue would work a different way i guess coz of the sugar syrup pouring and temp thingy, i have few ideas but havent really tried or experimented with them.... u can try just incase ....

Smbc is less sweeter than your normal buttercream
Is it okay to add vanilla pinch
Ofcouse yes . This is a basic recipe u can add vanilla , fruit compotes ( thick puree) and essence, cocoa powder , melted chocolate to flavour this

Hi dear, I have a query like till what temperature it will be stable .. I mean at what temperature it will start melting ...
like when its on direct heat..... it does become soft in sunlight ( outdoor parties) but doesnt really loose shape

In ABC, to make it less sweet.. can we add here too is it??
Smbc is naturally less sweeter than american because american buttercream is just butter and sugar and maybe 2 tbsp of cream honestly
But if u want this to be less sweet just reduce the sugar by 10% and add a pinch of salt

I am trying out non aquafaba recipe, once perfected will share.....i totally understand the usage or wastage of chickpeas..... flax egg(flax seed gel) doesnt work have already tried......till then u can use Ermine Frosting its eggless, smooth, yumm and less sweet.....ua-cam.com/video/O_KkkEo-w9w/v-deo.html ....will redo in clear recording and post again

If its too hot and humid just pop the bowl in the fridge for 20 mins and then whip on high

how can a buttercream made without Butter??
I will not be a buttercream but instead aquafaba cream
I wanted to know if it will be stable without butter bcs I eat a lot of cakes and it always makes me feel very guilty to eat so much butter😂😂

Chirag Bohra .M hey no only aquafaba tastes not that great why dont u try whippedcream cakes instead. They are lighter and no butter too

depends kaunsa recipe aap follow karte hain, yeh thodi fluffy and cloud like mouth feel deti hai, samjho whippedcream aur american buttercream ko mix kar diya ho, its smooth

I have been whipping it from 20 mins now and it's not getting whipped

Thats why i say later that once the bowl is cool to touch and meringue has been whipped then only start adding butter

1 can batch is enough to fill and frost 1 kg..... extra batch is needed if flowers or border etc is made

Airtight Container, Cling wrap touching the buttercream surface
2-3 weeks - fridge
3 months - freezer
if u get a freezer burn taste after thawing it , just add vanilla and whip again. its not spoilt its just coz its kept longer time in freezer

I have stored in fridge in Airtight box for 2 weeks and freezer 2-3 months
It does sometimes get freezerburn smell just add some vanilla and whip it again its good to use

yes for a few hours, all buttercreams need refrigeration after sometime, because they eventually have butter in them

I havent tried , but i guess you can , in that case you dont have to use the double boiler method just directly mix.

My mixture stared to become soupy like once I started to add butter..🥺🥺🥺 where did I go wrong please???
u have added the butter when the meringue was hot...... always touch ur bowl to see how hot, warm or cold it is.
the fix to this is - keep the soupy buttercream in fridge allow to cool down a bit, and rewhip again..... DO NOT THROW IT
