My favorite fight in souls by a longshot, no way I'm using Star Fist for this. We down the dragon with a pickaxe and some frost skills for the cleanest of kills.
Cold Pickaxe + Chilling Mist AoW and get a frostbite as a reward for every poise break, but that means we have to keep the hits up or this fight would never end.
I like midroll for this fight since it keeps me closer to Bayle's head so I can score CR2s with the pickaxe. With a lighter weapon I would go lightroll.
