The rate at which his Kagune seemed to change and mutate definitely put him head and shoulders above any other Ghoul out there... I only knew 'bout like the most basic of these, seems i'm actually Waaaay behind on the bulk of what he's been up to.

Kagunes are shaped by both the type of kagune and the users imagination, mindstate and personality. Kaneki at first only has a limited understanding of kagune, which is why at first he just imitates how Rize used hers, but as he both experiments and gets more fucked in the head, he learns how to shape it out in different ways. Another example is the Quince squad, the chubby girl at the end can do whatever she wants with it, like shaping multiple arms with it

Eto explains and demonstrates that a Kagune's size is determined by the quality and quantity of the Ghoul's RC cells (Cells absorbed when a Ghoul devours a human) and the shape of a Kagune is determined by the Ghoul's imagination and creativity. To a Ghoul who isn't very creative or intelligent, their Kagune typically has one shape. But for a Ghoul like Eto, Kaneki, Takizawa and Mutsuki, they're able to shape their Kagune into whatever they desire due to their tactical thinking and/or creativity. It's similar to the Symbiotes' powers in Marvel comics. What a Symbiote can shapeshift into is only limited by the host's imagination.

In the manga, it's said that he developed several more organs (some of them being Kakuhou) after becoming the dragon which is the reason why he was able to use different types of kagune at the end and breathe in the spores without being affected.
