It's not a new Winding. It's jusr re winding. You have to determine your old motor wire size, coil lenth and number of coil and coil weight etc. If you make a brand new motor winding then you have to calculate more term.

Turns per volt=7.5/(real pole area) Real pole cross section area excludes the air gap between the teeths and laminations. I have given you the hint. You can develop the formula now according to the poles and working voltage. 7.5 is a constant derived from very complex calculation, so don't bother much about it. It's general thumb rule taking 1 Tesla as flux density to calculate turns per volt.

We just assume 50% teeth area in stator and count the teeth to get the stator pitch area. And use the calculation above to arrive at turns per phase and pole. If you can measure the width of each teeth, your calculation of turns will be more accurate.
