Every time I see one of these I realize I have a very different definition to "having nothing in the fridge"...sometimes all I've got is garlic and onion and cabinet carbohydrates.
I hear you 🤗 there were times when I literally had nothing in the fridge. Now I have another problem - my pantry is mostly stuffed with legumes, grains, tomatoes... So I actually CAN cook like a hundred meals, but when I have no fresh vegetables, I feel like there's nothing to eat. 👀🤔
she's teaching folks how to make the tapioca pancake thingy and i love it! beiju (pronounced bayjew) is the indigenous name for tapioca, and its a staple of the north/northeastern popular cuisine here in Brasil typical filling will vary with each meal: breakfest beiju it's just with a lil butter, and you can add scrambled eggs for a more filling beiju; lunch beiju is wild you can get really creative here: there's meat, salads, grains, anything you can think of basically; now for dessert you can put condensed milk, fruits, chocolate, jelly, anything sweet really, but we usually like them with coconut. it's a really sensational 10/10 food, its basically our own wraps or tortillas for our latinx friends
a tip about the tapioca, don't press it so tight, it gets too hard. if you put the tapioca flour (goma) gently in the frying pan, already hot, just being careful not to leave holes, it gets much better, you can even turn it sides, and it salted, just with butter on top, or with a scrambled tofu, it is delicious, even more with these delicious vegan butters that has here in berlin. tip from someone who grew up eating tapioca ::)

so cool that you try food from other countries, I should do that too, it will open my options. i'm from brazil, it's a good ideia putting yogurt on top of the tapioca, never thought of that, just one tip, before you put the fillings flip it, so both sides will be cooked, we usually do it brazil, and here we find tapioca that comes already hydrated, hope you find it in german too.

Broo today I thought there was noting to eat in my fridege but I looked and found some rice from texas roadhouse, and some thinly sliced turkey, a tip for heating up rice is to add a bit of water to the rice and mix it together, made the texture of the texas roadhouse rice much better than they had made it!
The recipes are good, but I'm so confused about all the rice sheets, vegan cheese and sour cream with white wine vinegar called "nothing in the fridge ". Im a student. When I have nothing in the frige, I have... nothing. In. The fridge. If your fridge has vegan cheeses and dips and some sauses, and also vegetables, tofu and tortias, you probably will figure something out. Again, the recipes are good and creative, it's just the name that make me think- are we really that lazy and incapable of simple things like putting the fancy ingredients together without thinking "oh no, i don't have them lined up at the shelf conveniently ready to mix like in recipe photos, I guess I'll starve"

If I was to buy all these ingredients I would have to spend my whole monthly salary on them: peanut butter, tofu, jarred paprika, soy sauce, non dairy milk, tortillas, basil, cashew/walnut/pecan, vegan butter, white wine, fresh parmegiano, vegan bbq sauce, rice paper, sriracha, vegan pizza cheese, hummus, sweet potato, tapioca starch... Do you even know how expensive cashews are? Don't get me wrong, there's nothing wrong with your recipes...but the title is ridiculously misleading and it's quite offensive that you'd try to attract the general crowd who literally don't have any food in the fridge just to rub it in their nose at how poor they are. xD disgusting really.

@@arf6899 it was a little passive aggressive, you're right, but I don't think they were trying to gatekeep food or shame op for not being vegan. they were just pointing out that, scientifically, yeah it makes sense that the human body would reject milk that's meant to nurse the young of a completely different species.
guys i wasn't about to start a passive agressive fight here and i didn't mean to hurt anybody's feelings or opinions about food in general. i personally am not vegan nor vegetarian but i'm trying to eat healthier and more diverse (and i felt the need to explain in literally half a sentence why i think the plant based options are great for me [and many other people as well]). i do drink regular milk (lactose free, obviously) and non-dairy milk as well. i think it's my choice if i'm being vegan or not, and if i'm watching Mina's videos or not. i actually love them and find them really helpful - that's why i commented. that's all.

Here's some tips for the tapioca: - if you accidentally pour too much water, you can just let the mixture sit in the fridge over night; the starch becomes solid and the water just sits above it (and it's easy to remove). - in the pan, instead of trying to shape the tapioca with a spatula, you can simply "shake" the pan and it should distribute well. i like to do a "mexican"-type tapioca. i put guacamole (just avocato, lime and seasonings), refried beans, tomato slices (raw or grilled), grilled peppers and onion, etc.... and then i top it with nutricional yest. it's really good! hope it helps! :)
I don't know if this can help you, but, to form the disc shape I simply heat the skillet, then add the tapioca and spread with a spoon. I don't like very much when mine is gummy, so I make a thin layer, then when is dry on the top, I flip. This could be a little messy, but you can control it better with practice. For the savoury version, just don't add any coconut, and try coat with just a little bit of butter. Just like that is even more delicious. Try top this with hibiscus jerk and some cream. You can thank me later! ;*

Also try using a bit of vegan butter on the tapioca, and crunchy salty fillings are really good too

Love your recipes as always, I will definitely try the pepper/peanut sauce :) Side comment: to me, this seems more like a regular meal ideas video rather than a leftover one, most of the ingredients showed, I wouldn't consider "basic" or "nothing in your fridge" ingredients. That being said, keep up the good work, your videos are amazing!
That pepper sauce is the best sauce I've ever had in my life thank you so much mina. I used tahini instead of pb, then dried chives and Parsley, a tiny bit of curry powder and 1 tbsp homemade hot sauce. Divine!!!

Oh my, these all look so tasty!! Can't wait to try to make them :) For The Lentil Sweet Potato Taco Curry, if we use not cooked lentils (raw lentils? I don't know) should we add them with the sweet potato? Also, you forgot to mention the lentils in the recipe in the description box :)
It depends on the lentil that you are planning on using... If you are going to use green gram (the ones people use a lot for sprouts) you could add it after adding the liquid, or the sweet potatoes. It cooks quickly enough. But if you are using chickpeas, you'll need to soak the dry chickpeas the night before and these take a lot longer to cook then veggies so if you add them with the veggies, the Vegetables will be overcooked by the time the chickpeas are edible, so at home, we pressure cook the chickpeas seperately and add it to the curry or soup.
I don’t think this is “nothing” in the fridge. You could easily look at these items and come up with a meal. My idea of nothing in the fridge is salami, cheese slices and a cucumber. I don’t have any of the ingredients make this stuff even when my fridge is full.

I love your recipes but we have a different definition of Nothing, haha. My nothing means I've got oats and jam in my house. Perhaps also yeast and rye flour xd. Might also have some sour cabbage. And tea. And literally not one more thing. Not even peanut butter. Because as long as there is peanut butter, oats and jam, I will survive :))
Bro all of these recipes require things I dont have. This is not nothing to eat in the fridge. If I had all of this I would not be searching for this. SMH
Tip that's helped me out a lot, Google whatever couple ingredients you do have that you think might work together and "recipes" and most of the time you can find something good and just sub out anything you might not have or make a simpler version of whatever you find. Bonus point, also look up a sauce you can make and most dishes will come out pretty great

Great ideas! Just for a quick note, I always scrunch up baking paper sheet and then flatten it out, it makes the paper easier to work with, as it fits into the pan and doesn't move around or up. Highly recommend doing that! Thank you for the ideas, I love watching your videos for a few years now ❤️
I really have nothing in my fridge. My definition says I only have tomato, onions, garlic, pasta, milk, butter, spices. I don't have tofu, nuts, topica flour, tortillas,etc
I am very sceptic with videos like this, because people always have a 5 course meal in their fridge when they say "i have nothing in the fridge :(((". When i dont have anything in the fridge its 1 carrot, 1 garlic and a bell pepper xD so this was perfect!!! I did the pickled carrot, the tofu and the roasted bell pepper sauce. All very delicious :-) thank you!!
So cool to see some tapioca there! I´m spendong hollidays in Brazil and eating it as much as i can because the fresh stuff you get from street markets here is hard to beat. I highly recommend that you try passing your tapioca through the sieve directly into the pan until it forms a nice layer and dont press it down. do that with the heat already on and it will start sticking strait away. you can gently use a spoon or spatula to go around the edges and make them a little neater if needed, but you´ll get a much nicer texture if you don´t press it down so much. Once it´s firm enough you can flip it and ler the other side heat up a little. I like having it savory better than sweet. my favorite is with some avocado mash, tomato and maybe some fresh greens like rucola. if you are into vegan cheese you can try a slightly more unusual combination (but very traditional where i come from) which is cheese and banana. let the cheese melt and the banana heat a bit, add a bit of cinnamon to it and fold it in half. if you like some sweetness add a bit of maple syrup on top. might sound weird, but its amazing!

What I always love your videos for: you are so refreshingly honest and so down to earth. I mean ... Who doesn't know any of those "ughhhh, I've got NOTHING in my fridge"-days 😂 thank you so much for that. You always feel like a friend we can relate to more than anything else.

For The Lentil Sweet Potato Taco Curry, if we use not cooked lentils (raw lentils? I don't know) should we add them with the sweet potato? Also, you forgot to mention the lentils in the recipe in the description box :)
It depends on the lentil that you are planning on using... If you are going to use green gram (the ones people use a lot for sprouts) you could add it after adding the liquid, or the sweet potatoes. It cooks quickly enough. But if you are using chickpeas, you'll need to soak the dry chickpeas the night before and these take a lot longer to cook then veggies so if you add them with the veggies, the Vegetables will be overcooked by the time the chickpeas are edible, so at home, we pressure cook the chickpeas seperately and add it to the curry or soup.
I don’t think this is “nothing” in the fridge. You could easily look at these items and come up with a meal. My idea of nothing in the fridge is salami, cheese slices and a cucumber. I don’t have any of the ingredients make this stuff even when my fridge is full.
I'm so happy to see the Brazilian tapioca recipe!!!! My fiancé is from Brazil and his mom always makes Brazilian tapioca, it's one of my favourites. I usually like to wrap cheese inside my tapioca 😋

I love your recipes but we have a different definition of Nothing, haha. My nothing means I've got oats and jam in my house. Perhaps also yeast and rye flour xd. Might also have some sour cabbage. And tea. And literally not one more thing. Not even peanut butter. Because as long as there is peanut butter, oats and jam, I will survive :))

Tip that's helped me out a lot, Google whatever couple ingredients you do have that you think might work together and "recipes" and most of the time you can find something good and just sub out anything you might not have or make a simpler version of whatever you find. Bonus point, also look up a sauce you can make and most dishes will come out pretty great

Yeah..?this Is a wonderful recipe when I have a pantry full of food! I have old lettuce, withered carrots, One pretty much dried up taco, cornmeal, cheese, Water, an ice cream bar. I don’t want to use the stove or the grill outside. I live in Arizona and it’s even too hot to grill in the backyard… 117 F today what am I having for supper?

Great ideas! Just for a quick note, I always scrunch up baking paper sheet and then flatten it out, it makes the paper easier to work with, as it fits into the pan and doesn't move around or up. Highly recommend doing that! Thank you for the ideas, I love watching your videos for a few years now ❤️
Tapioca isn't supposed to be dry/crunchy outside!
You may put and shape the tapioca before turning the heat on, so it doesn't cook too much!

I am very sceptic with videos like this, because people always have a 5 course meal in their fridge when they say "i have nothing in the fridge :(((". When i dont have anything in the fridge its 1 carrot, 1 garlic and a bell pepper xD so this was perfect!!! I did the pickled carrot, the tofu and the roasted bell pepper sauce. All very delicious :-) thank you!!

So cool to see some tapioca there! I´m spendong hollidays in Brazil and eating it as much as i can because the fresh stuff you get from street markets here is hard to beat. I highly recommend that you try passing your tapioca through the sieve directly into the pan until it forms a nice layer and dont press it down. do that with the heat already on and it will start sticking strait away. you can gently use a spoon or spatula to go around the edges and make them a little neater if needed, but you´ll get a much nicer texture if you don´t press it down so much. Once it´s firm enough you can flip it and ler the other side heat up a little. I like having it savory better than sweet. my favorite is with some avocado mash, tomato and maybe some fresh greens like rucola. if you are into vegan cheese you can try a slightly more unusual combination (but very traditional where i come from) which is cheese and banana. let the cheese melt and the banana heat a bit, add a bit of cinnamon to it and fold it in half. if you like some sweetness add a bit of maple syrup on top. might sound weird, but its amazing!

@@coolio4843 any melty cheese that you like! Gouda would be nice or you can use vegan cheese. I just would not use cream cheese
