Since some of the newer research is saying that the people with a wheat sensitivity (not Celiac) may be intolerant to the fructans in wheat and not the gluten. I wonder what the difference if fructan is lower in softer wheat too? That actually may be why some can tolerate it. I found some papers, but they did not break down fructans by type of wheat. Oddly enough, gluten free bread is higher in fructans than gluten bread.
Fructans/fibers ferment in the ileum or even in the small intestine when the microbiome is compromized. Many of the so called gluten sensitive have Ibs as a diagnosis. I still have to see the immunologicam correlation with gluten sensitive since celiac disease activates the Mhc 2 and the mhc2. Gluten sensitivity can as IBS, create potassium/magnesium/sodium deficiency due to the diarreah crisis which can increase cortisol levels. As a celiac disease petient, before I went to the endoscopy, for many years gastroenterologist told me to follow a low Fodmap diet.

That is the reason why I quit gluten free food because my fructose intollerance did not help my recovery. The added gums, sugars destroyed my gut.
