I think that you can retain the "old barn" aesthetic as you adapt the space to your needs. If you want large windows, perhaps they could be on the walls that are not visible from the driveway, and the interior could take advantage of the style and the beautiful beams and wood. In that setting, your studio can be be unique and distinctive, and not resemble a transplant from a strip mall. As you enclose areas for heating efficiency you might not have to make major changes to the basic structure, and in years ahead, as your needs change, you can undo anything that was done now. You are doing well in updating your house while still respecting its history, and perhaps you can do the same with the barn.

Can OSB be used for slab flooring? May sag in the future.
It was framed up level and plumb
The more modern version is to put the insulation on the outside then you can work with the timbers rather than covering them
