8. Imagine eating out in Istán, Monda or Ojén

In the heart of Malaga province lies the Sierra de las Nieves, a real nature paradise full of contrasts. It’s a UNESCO Biosphere Reserve and was recently made a National Park. It’s well worth visiting any time of the year, as each season brings new smells, colours and sensations. Our chef, Miguel Herrera, prepares Bolo de Hinojos (Fennel hotpot) in this unique environment.
