Ingredients and preparation of eclairs:
1 milk (100 ml).
2 water (100 ml).
3 sugars (20 g) and a pinch of salt.
4 butter (100 g).
Bring the mixture to a boil.
5 flour (160 g).
Mix until a crust forms on the bottom of the pan and the dough gathers into a ball.
Allow to cool for 5 minutes.
6 eggs (5 to 6 pcs.).
Beat the eggs into the mixture in 4-5 additions.
If the dough is too thick, add 1 more egg.
Eclair length 10-12 cm.
sprinkle with water.
Bake at 200°C for 40 minutes without opening.
Leave to cool.
Vanilla Cream
4 egg yolks
500 ml of milk
2 vanilla sugars
60 g of butter
60 g of starch flour
100 g of sugar
250 ml of boiling water
