Lemon Dandelion Hand Pies || Spiritual and Emotional Cleansing Spell

    For these little hand pies you'll need:
    Crust:
    1 Tbs sugar
    1 tsp salt
    10 Tbs cold butter
    2 egg yolks
    4 Tbs ice water
    2 cups flour
    Filling:
    3 egg yolks (save whites for meringue)
    3/4 cups water
    2/3 cup sugar
    3 Tbs cornstarch
    pinch of salt
    juice and zest of two lemons
    1 Tbs butter
    a handful of dandelion flower petals
    Meringue:
    3 egg whites
    1/4 tsp cream of tartar
    1/4 cup sugar
    pinch of salt
    1/4 tsp vanilla extract
    Begin by making the crust. To do it quickly combine all of the crust ingredients in a food processor and mix until the mixture is crumbly. Then press the dough together and roll out into a thin sheet, cutting out small circles with a cookie cutter. Set circles on a cookie sheet to chill in the fridge while working on other steps.
    To make the filling whisk together the egg yolks in a bowl and set aside. Combine the water, sugar, cornstarch, salt, zest, and juice in a small saucepan and whisk over medium heat. Once the mixture begins to bubble and thicken slowly pour a bit of it over the egg yolks, mixing continuously. Once the yolks have come to the temperature of the other mixture add them to the saucepan. Stir over medium heat until mixture thickens and bubbles. Pull off heat and add butter and dandelion petals. Set aside.
    To make the Meringue mix the egg whites with the cream of tartar in a medium bowl. Whisk with a hand mixer until stiff peaks form. Add in the remaining ingredients and continue to beat the mixture until it forms glossy peaks and sugar graduals can no longer be felt when you pinch the mix between two fingers.
    Pull the crust out of the fridge and spoon a bit of the filling on top. Add a generous dollop of meringue and pop them in the oven at 350 for about 15 minutes. I hope you enjoy!
    Best when served cold but still absolutely delicious straight out of the oven!

    These are lovely! I worked as a French pastry chef for years and you've done excellent work! If anyone feels slightly intimidated by using 1 pot, and they're worried about burning the curd, you can use a double boiler the process will just take slightly longer. There are many ways of making pastry curd, and the debate over using cornstarch can be a heated one. For a recipe like this one, where the product is exposed to heat in the oven for a second time, cornstarch is a fantastic stabilizer and keeps the curd from breaking down while in the oven. You can also use arrowroot, if you're not a fan of cornstarch.

    I made your filling with a Lembas bread recipe (the elven bread that Frodo and Sam eat on their journey to Mordor in LOTR) at 390° for a half an hour (since there is a temperature difference) and used the incantation for a spell from Lunar Wisdom that is "reclaiming mental health," every bite if it is so uplifting and delicious! LOTR has always centered me somehow. I love every bite of it!

    I had another intense therapy session today, you always seem to upload around the time my session finishes, and today we were doing about trauma timelines so I am so emotionally tired and washed out. This is a lovely little pick me up and soother to watch, thank you!

    How do you dry your herbs in the background?? I always have trouble with drying things out completely

      Maybe you live in a humid area or humid house? A dehumidifier in the same room you dry your herbs can help. This seems silly, but maybe you can string up some silica desiccant packets with your herbs when you dry them?

    Hi there. Another helpful tip if you want to save time but kind of keep that daughter of old way, you can freeze your butter and use a cheese grater, to grate the butter and mix the peices in with your flour with your hands. Works great for biscuits and scones too! I just made some tonight actually. Worked beautifully. ♡ hope this helps. Also, I love dandelions and love the idea of this recipe! What do dandelions represent spiritually? Do you have herbs you like to use most for stronger incantations? Thanks so much!

      You should try adapting it by finding a GF crust recipe you like! That’s usually what I tend to do with these types of “separated” recipes

    Back when flowers started growing in spring, someone went up and down the street into my neighborhood and sprayed bleach on the dandelions. Now there patches of pure white grass where they used to be and it makes me so sad and a bit angry because it just seems very inconsiderate and spiteful for them to have done that

    When you get cough or cold .. use a chunk of ginger and put it right on to flame (push a fork inside) ,burn it till it start getting black ,sprinkle little salt and just chew it when it gets little less warm and spit it after u suck all the juice out of it :)

    I think what I'll do with the yolks is put my small bowl in a large bowl with ice water to keep them from cooking...I will, however, do as you say and go in slowly with the whites so as not to make scrambled eggs. Thank you. Peace :)

    Aah I LOOOVEE recipies that save both parts of the egg and incorporate both seperatly, I cannot BARE to throw away the yolks or whites because a recipie doesn't call for them, excited to try these out!! Would you suggest making them during a waxing moon?

      Thank you and I appreciate the recommendation but I am not very well versed in vegan cooking or especially vegan baking and I only ever share recipes that I've worked on for a while to perfect. I make these recipes for my friends and family and as none of them are vegan and as I don't really get to eat the food I cook - the ingredients I have to work with aren't vegan. Anyone is always welcome to adapt the recipes to their diet preferences and I try my best to pin comments that share how to change the ingredients up but I am really just not adept at vegan cooking and I would rather leave sharing vegan recipes to the people that actually follow a vegan diet

      I bought calendula petals off Etsy. I did a quick search for dandelion petals and they showed up on Etsy. Also, the root is sold on mountainroseherbs.com
