Those interactions with Michael's family is one of the reasons I love Rockstar. They knew that 90% of the players would never see half of those interactions but they made it anyway just so the game could be as close to perfection as possible.
The amount of scenes and dialogue you have with your camp in RDR2 is even more impressive. You can literally finish the game without hanging around in your camp so you could just miss all of that, but Rockstar put so much time and effort into these little things.

If I had to guess, Michael may have formed a bond with one of the horses from the cut heist, the Sharmoota Job, and took it back to his house to care for it. This would make sense chronologically as to why Michael would have a horse on the ready during an endgame mission.
I really like the idea of Michael adopting/stealing a horse to deal with the loneliness after his family leaves him. It could've been both kinda wholesome, and hilarious when his family comes back and roasts him for it lol.

Probably just like that, Our custom characters getting high as hell, them bouncing for a car meet or something of the like, then getting caught up by the families, Franklin making the call, then finally seeing modern Trevor and Michael as cameos after the jet and horse display. After getting to an afar checkpoint, we'd get a short but wholesome cut scene between the 3 of them while Lamar is still shocked after the absurd battle. Would be perfect.
