We do 8 cups of flour all the time with this machine to make 2 loaves (2 lb.) of whole wheat bread at one time and have never had it get hot. We have sold them for the last couple of years and have not had anyone have any issues with these wonderful mixers making bread.

I've been looking for a long time for a stand mixer to relieve my back from heavy kneading but found a lot of conflicting reviews, with complaints even for top KitchenAid models. What I mostly need from my robot is that it kneads the dough well without it lingering on the bowl edges. The video shows that I can trust this MUM5 to do just that and I happily made my purchase.

Cinnamon bun dough should be lighter than regular bread dough. So I use half cake flour to begin with and then add the 2nd half AP flour(this is your basic pastry flour you can make at home using half cake flour and AP flour). The dough enhancer is a good addition but the gluten flour is not needed. Want it lighter than bread dough. This method makes a good doughnut dough mix as well.
8 cups of flour or 1kg is way beyond what this machine is meant to handle. 500-750g would be the right range; and it would not shake and strain as it does in this video!
hi dear, are you still using this machine? is it still functioning well? or it already broken, may I know when? when you are kneading your dough, is the motor part hot or super heating?? how long you takes to knead?
I'm using this one, and trust me, it cant handle 600g of flour (final dough comes around 1kg), the motor heats up and gives out a burnt smell. I already sent it for repair once. Lets just say that Bosch was not the same as before, now it is as bad as kitchen aid in handling bread dough
We are making 4 lbs. of dough with the Styline in this demo. It can handle up to 5 lbs. of dough altogether which is a little larger than the Bosch Compact. Because the hook is connected diagonally into the mixer and doesn't rotate straight up and down like most other mixers, we have very little issue with the dough climbing up the hook. Basically the dough is being pushed down all the time it is kneading rather than up.
brummie111 To be honest I think it barerly handled this 4 lbs. The whole arm was jumping and the bowl was moving in all directions and the motor was making worying sounds. At 9:35 in your video the arm looks like it will snap any second.
Michi K No, I'd say the machine is designed to make these motions because it kind of "flexible". This is supposed to flex back in the course of resistance of the dough. I wouldn't be worried. ;)
Thank you for this review but I hope people do know that that mother is only 700W and is not to be used for so much dough or for any dough at all you need to 1000W motor for that but over all pretty great!
The dough is climbing up, should be a stop or something. The usually have a round disc at the top? This maschine is old now, will bosch come out with something new soon?
Why has Bosch already discontinued this model? It lighter weight versus my 40 year old KitchenAid that motor died. The Bosch Styline seemed appropriate for me now. I was ready to purchase, but read on Bosch website - Discontinued. can you please explain. Disappointed, thanks,
Carol Skog the newer styline have double the wattage, meaning double the power. They aren't much more expensive either. This is an older video with the older 450 watt machine. The one I just purchased functions all the same but has 900 watts. It's still coming in the post, so can't actually recommend it until I've used it though.
Can I use the cookie whip attachment the same way as a paddle attachment? A lot of cake recipes I’ve been reading call for a paddle attachment but my MUM52 doesn’t come with it. It has the same attachments you’re showing in the video.

It does seem to be very noisy.I don't expect a breadmaking class on a review. It would have been better to show the rest of the paddles and attachments. We want to know what we are getting for our money, I am not interested in cinnamon buns.
It’s not practical, every time I use it, I end up having so much more to wash bits and bobs and the machine itself it is not practical to use with so many diferente parts to mont, don’t buy it

It hasn't changed. I'm still happy with it.
By the way, my bread is made with 400g flour (i saw ppl asking for the amount) and the motor has no problem handling it.

Whats the weight of dough you are using? Can this mixer handle up-to 6 lbs of dough? Does it have the issue of the dough climbing the hook?

Hi Melissa, I think there is a risk of over mixing with the whip attachment which may effect the results
