  • Arabic Mutton Harees or Hareesa is a traditional healthy and delicious Arabic one-pot recipe.
    Each country has a different variant of this harees but usually made with meat and boiled barley. You can also use a combination of wheat and barley.As for the fat, ghee is quite often used and what I used. However, butter is just as delicious
    .
    Whole wheat/ Barely: 1 cups -(soaked overnight)
    Mutton/ Lamb meat : 500 g- (I used boneless)
    Salt - 1 tbsp
    Cinnamon stick: 2 inches
    Green cardamoms: 4 pcs
    Cumin seeds: 1 tsp
    Cloves: 6 pcs
    Nutmeg: 1 pc
    Mace: 1 pc
    Butter: 100 g
    Olive oil: As required

    Method;
    METHOD;
    In a pot , add meat in a pot, add whole spices in a spice strainer and place in a pot. Pour water , cover and let it cook until meat is tender. You can use a pressure cooker for an easy and fast process(it will take around 20 minutes) . If using a pan it will take about an hour to completely cook.
    Once meat is tender., add presoaked grains and salt. Cover and let it cook 2 hours or until grains soft completely. Stir after 10/15 minutes other with stick to bottom of the pan.
    After, Remove spice strainer.
    Use hand blender and blend everything together until desired. You can add water if you feel consistency is too thick and let it cook for another 20/30 minutes and stir after 2 minutes .
    In the last , add ghee or butter, mix it well. Serve & Enjoy.
    While serving I Used traditional way to serve with Olive oil.
