Stylistically Staniosis is more of a come-forward fighter and against a puncher like Ortiz I don't see it ending any other way. To beat Ortiz you have to outbox and counter him, you not really gonna out-muscle him.
As for Ennis against Villa he can't get lazy with his defense because Villa holds his power even in the later rounds and he's always throwing bombs

Those divisions have movement, Spence and bud pretty much locked up the division for yrs. Bud fought a mandatory in porter, but Spence fought 1 mandatory 7 yrs ago, aside from that people weak champs for belts, then was pretty much out for 3 yrs. People aren't gonna risk losing and get knocked to the bottom with no movement
