      You need to put out a book of your knowledge if you haven't, and your story. Countless books with either complicated scientific explanations or none at all out there. The explanations in your videos are so succinct and consumable. Just your bread basics have helped me sooo much its unbelievable, especially with pizza dough. Perfect results in the pullman 2.2lb pans because of you explaining the baker's % and making large volume. I'm making rye and caraway rye, lots of nice bread because of you. Thank you and I'm sure my family would thank you too. Haven't eaten a slice of bread i didn't make in months, its terrific.

    This is so perfect! I was craving blueberry cheesecake a few weeks ago but trying to be healthy! Thank you for this recipe which is a lot healthier than the cheesecake recipes I am used to 😊 but also looks yummier!

    Baked a double batch of these last night (with my last bag of Spelt flour) - sharing at the office today. YUM! Nice chew to the dough and the slightly sweet filling with fresh blueberries - I am enjoying with coffee, but I think a nice cup of hot tea is the way to go.       No more spelt recipes for a while I think, so you won't need to top up. Unless you decided to bake them again or do some other projects :)

      @@ChainBaker Thanks for the heads up - I do like this dough recipe - oh, I can make it savory and fill with sautéed mushrooms and shallots. Perhaps layer with some béchamel and a slice of brie and then add the sautéed mushrooms, bake and sprinkle with some fresh parsley? (because there is no way I would top with cilantro!!!) 😜

      Eggs are healthy if you don't eat dozens of them every week, so I don't see a need to change anything ✌️😎

      @@ChainBaker eggs are healthy for sure, unfortunately they are not vegetarian, so I don't consume it. I generally see canned condensed milk as an alternative which is gilled with sugars and is very heavy to digest. If you have any other suggestions that would be great.

    This looks so good! I have some of that dry cottage cheese, so I am going to make these. 😄
    I have two questions:
    I can't have egg whites. Do you think an egg yolk or two would work in the filling?
    Second, will these freeze well? I can't eat all of them at once! 🥰

      Egg yolks should do the job just fine. Freezing them would dry them out a bit too much for my taste. You could just halve the recipe instead :)

      @@ChainBaker In Europe I have only seen barley being used for beer lol but in America barley flour is easily available on shelf. I would wait for your take on bread made with barley flour as it is lower in gluten than wheat

    This looks good.. 😊 I’ve been watching your videos for breadmaking. I am looking for a recipe for a Turkish bread/pide bread that i can use for sandwich. But i can’t seem to find them. It seems like it has the same recipe as a baguette but it’s shaped like a ciabatta but then brushed with egg wash and sprinkled with black sesame seeds.. i saw these pide sandwiches on Chestnut Kuwait on Instagram. I wanted to make these sandwiches at home with that bread. i hope you can help.

    is the cheese your using similar to Ricotta?

      Depends. Ricotta can be dry but it can also be too wet for this recipe. Try and get the driest one you can find
