    This is my take on lamb Doner kebab slightly modified recipe
    Ingredients:
    1 leg of lamb
    Dry marinade:
    tbsp cumin seed
    1 tbsp peppercorn
    1 tbsp garlic granule
    2/3 tbsp coriander seeds
    1 tbsp paprika
    1 tbsp white pepper
    1 1/2 teaspoon cinnamon
    handful of mints
    handful of parsley
    1 1/2 onion
    dash of lime juice
    1/8 cup olive oil

      Also, I didn’t have time to marinate over night, so added the dry spice mix to the meat first, so it got drawn into the meat, then the wet marinade, and left a couple of hours. I noticed the way you slice the meat across the grain makes for a better textured kebab. Thanks!

    What's with the 1 1/2 onion? How to destroy the nuances of any flavour full dish and make everything taste the same? Answer = add onion.
    I don't know if this has origionated in the UK but in the UK there is an obssesion with adding bloody nastyons (onions) to everything, how about trying a few herbs, spices etc. etc. a bit of finesse with delicate flavours.
    Probably obvious that I loath the damned things, I prepare many meat based dishes with not an onion within a million miles, friends, family in fact anyone who has eaten my meals always enjoys them and very often I'm asked for the recipe.
    Try just a little imagination, after all you will never find onion in a Greek or Turkish kebab ever.
