      Add the parmigiana at the end after you turn off the heat and you’ll have a creamier sauce. Also, add the basil at the last possible moment before serving. It’ll be a lot more fragrant and it won’t turn black. Prolonged heat destroys not only the color, but also those lovely flavor compounds we love in basil.

      I used to make this when I was little (30 odd years ago) some (quite a lot of) finely slice caramelised onions really add to this.

    You mentioned Parmesan Cheese and I immediately thought of Townsends old school Onion ring recipe that is mostly Parmesan Cheese. Would be a good one to try. Hats off to you. You tackle thing's a lot of others wouldn't.

    My Dad makes this for my family all the time cause it's so quick and easy, and it makes a lot of food. We typically eat it over gnocchi, but I've also had it over orecchiette pasta too. It's delicious! In my opinion, sun-dried tomatoes are the secret ingredient. They cut through the richness of the sauce and give it a great flavor.

    This is very similar to an Italian dish called "scaloppine", you can do them with lemon (scaloppine al limone) or mushroom (scaloppine ai funghi) 😊

    This bears a family resemblance to a chicken dish I've made for parties, only with a dijon tarragon cream sauce and cremini mushrooms in place of the sundried tomatoes and Italian herbs. Good stuff, very well received.

      Sounds really good. I love tarragon! I guess there's multiple ways you could make this recipe up. With the mushrooms I would add some truffle to it. Will blow your mind!

    I'm going to make this, but I'm going to add some sliced mushrooms when I add the tomatoes (or maybe instead of the tomatoes).
    I'm also going to add a little cooked and crumbled bacon when I return the chicken to the pan (not too much, because I don't want the bacon flavor to overpower the chicken flavor).

    Very lovely recipe. I can totally see preparing chicken this way. Very similar to a stroganoff but with a couple of different ingredients.

    You can also substitute the cream for greek yoghurt for a slightly healthier version with a but of tang.
    It goes very well with the parmesan.

      I was thinking the same thing. I was also thinking that one carefully diced anchovy filet would do wonders too, or a small handful of speck fried up in the pan to render out their fat to fry the cutlets in.

    Looks fairly easy to prepare and quite tasty as well there, Emmy!
    If I were to make it, I'd also add some sliced mushrooms and maybe diced shallots which I'd saute together along with the garlic*, and consider using evaporated milk instead of the cream (to lower the amount of sat fat there).
    I might also try replacing the chicken with shrimp or a mild fish like cod or tilapia instead there.
    *I've found that frozen cubed 'fresh' garlic also works well in place of crushed garlic cloves when I cook.

    How do you get the chicken so thin? Do you buy it that way? I don’t like to cook but I would like to make it for my dad. Don’t want to marry him but he does like to eat cooked food. I have Fettuccine noodles bought by accident. I think I may like the Helix bed to purchase.

When I tried it for the first time (and made the immediate switch) so many years ago...that pre-ground stuff is dust compared to fresh ground! And did we hear Señor Made when that stubborn garlic asploded? See, I made a dorky joke thinking your last name is "Made."

    My kids love this, but just the sauce and we put it over linguini. They call it the “pizza pasta” I think the sun dried tomato and basil give it a pizza flavor to them.

    I’m sorry for sounding ignorant, but why crisp up the chicken when it’s being put into liquid only to soften the coating? Again, I’m not trying to be rude, it’s an honest question. Thank you.

      My guess is that it is to create the browned bits in the pan that will deepen the chicken flavor throughout the sauce. I believe this is what the French call a "Fond" or a base for the sauce. The purpose, in this case, is not to "crisp" the meat but to achieve the browned bits that stick to the pan. This often why non stick pans are not great for the "fond" technique.
