I think it dates back to the colonial times when Calcutta (Kolkata) was the capital of British-occupied India and a unique cuisine developed which was an amalgamation of indigenous ingredients and spices with European techniques. I believe both Kabiraji cutlet and fish chop, were created back then.

Agree...Bombay Duck / Bombil makes wonderful fries...this fish is so tender and buttery that it almost melts when deep fried , and this makes it so different from other varieties which generally turn a bit flaky.
I have made it and turnout awesome I just added boiled potatoes for binding and boil the fish with cardamon , bayleaf and some clove thank you for the recipe @bongeats

You can steam the fish on the stove, it'll achieve the same result.

I have low mid and high heat options in the microwave.
Our microwave’s maximum power is 1000 watts. If someone is using, say a 800 watts microwave, it might take slightly longer.

Boil the fish and debone it. That's what we used to do when there was no microwave.
Bake it in oven lower temperature like English fish cake prep. Will taste better too than boiled.
