    So nice to see you Carter. I am actually canning tomato meat sauce right now but of course watching you as I go along. I use this for so many things. Your doing a great job with recipes from the pantry. Pretty amazing isn't it? Nothing gives me more satisfaction then walking into my canning room and seeing all the work and knowing there is food on the shelf. Your husband is so sweet, you make a beautiful couple indeed.     My guy is the champion of using the same food in new ways!! Leftovers are never the same in our house. I would be just like David...mashed goes under so it will mimic rice, florets go to the side. Those were some great meals!! I'm working on clearing out my freezers so trying not to have too many of my jarred items. I WAY overestimated how much meat and frozen veggies we'd use this year. I counted my kids in and as young adults, they almost never eat with us now. I need to grow less this year I guess. Thanks for the video!!

    One of the things I've noticed about younger new cooks is they don't know how to make "creative" meals out of whatever odd things they may have on the shelf. There have been times I was down to a couple cans of soup, maybe a vegetable and some rice. It wasn't a steak dinner but it filled tummies.

    I have been using up the Cuban and Mexicans fillings that I canned with you in the fall. I am SO glad they were put on the shelf. I will be trying that Pete’s Pasta because carbs are missed and have been verboten in this house for quite some time. I find that the zero carb tortillas do well with frying and fresh but not so well with baking. My enchiladas get really gooey and soft when I bake them under sauce and cheese for some reason. Might just be the brand I’ve tried. I have been buying Mission but might try the Hero since it is sold at my local Vons and at Sprouts now. I have some canned pork that I need to use and will try enchiladas again for sure. Thanks for the suggestions, as always. You are an inspiration!

    Hi Carter. I was so inspired by your keto muffins/cupcakes I tried them with pumpkin and a batch made with applesauce. Oh my! The pumpkin was fantastic - (my husband was thrilled) but the ones I made with applesauce were over the top! Maybe the applesauce would fill the gap til pumpkin spice season is upon us again! Thank you.

    Hi Carter! It all looks great!! I'm with you on soup and winter days, but as I watched you on tv I was eating a bowl of potato cheddar soup with bacon pieces. Soup base from the pantry and a jar of bacon pieces from bacon canning day. Added some 1/2 1/2 and cheddar cheese.
    I am in the process of cleaning out the last of the freezer meals. Week four of heat and serve lol but I had chicken enchiladas verde, wontons in Asian chicken broth, Indian chicken with rice, and tomorrow is ravioli!
    I am moving! Yep we have been packing jars for 3 days now! The family has separated it into piles for the Nashville house, the Virginia house and for us to eat up now until
    Our houses sell! What a job! But so appreciative that we have not been to a grocery store since Christmas.
    I'm looking forward to the Franklin farmers mrkt after the move! I'm really wanting fresh raw milk for cheeses. The kids had a battle over my cheese equipment and over Esme! Esme will be residing in Tn with half of the cheese paraphernalia, the rest will go to Va as my son wants to learn to make cheese and smoke it. So much fun dividing things between two homes but glad the kids all want me to live with them!!
    Esme is going day and night turning bone broth into bouillon! I made cubes and powdered! Until the next episode. Thank you for all you do. Connie

    I forget what was your favorite way to slow roast pecans was. I know you soak them in water for a period of time, but then I forget the rest of the details. I've got to write this down! Do you happen to remember of the cuff? I've tried searching for the video where you told us about these but couldn't find them. They are heavenly. Thank you for another video!

      Yum! Soak for 7ish hours in heavily salted water. Then drain and spread in a single layer on a cookie sheet. 12-16 hours in the oven at 175F. It's time for me to do another batch too. Good to see you, BlueDahlia!

    Carter, isn’t it fun to take something you canned for one recipe and use it in a new recipe? I have done that a couple of times with the ratatouille I canned making a pasta dish and as a topping for chicken. Now I think I’ll try the quesadilla idea but use the ratatouille, beans and some cheese. I’ll let you know what my David thinks. Great video! Have a good week. ❤️

    Ok. Lets talk shelves. It never occurred to me to question my shelves. They are PACKED with full jars. What kind if ahelves are you worried about? I need to go check my shelves! And I'm remodeling too....
