*Pizza Dough:
1 Cup Warm Water
1 Tbsp Yeast
1 Tbsp Sugar
2 Cups - Flour
1/2 Tbsp Salt
1 Tbsp Oil
Mixes For About 15-10 Minutes.
After 20 Minutes, Cover and Throw This in Warm Air For 40 Minutes
*Tomato Sauce:
2 Tbsp Oil
28 Ounces Tomato Sauce
2 Tbsp Tomato Paste
2 Tsp Dry Basil
1 Tsp Salt
*Topping in the pizza:
Pizza Dough
Tomato Sauce
Mozzarella cheese
Fresh Mozzarella Cheese

Looks dank as usual Quang, I made pizza tonight too.. I've been to all the good Pizza joints in NYC, and my pizza goes punch for punch with most of them in my not so humble opinion.
Anybody interested should try this recipe out, Makes 2- 10inch pizzas
Dough:
(Dry)4 cups flour, 1/2 tsp salt
(Wet) 350ml warm water, 3.5grams active yeast, 1/2 tbsp sugar
Knead until springy (about 5-10 minutes)
Instructions: Let dough rise and hour. Knock it down. Then separate into two portions, and let them rise again for an hour or so
Sauce:
Canned whole peeled San Marzano Tomatoes (break them up with fingers or blender for less chunky)
Fresh chopped garlic, some thinly sliced onion or shallot, 1 tsp red pepper flake, dried oregano, dried Basil (to taste)
Instructions: Put 2-3 tbsp of olive oil into sauce pan on medium heat, throw in garlic/onion/pepper flake/ oregano/ basil. Cook until translucent, but not browned.
Then pour in the crushed San Marzano tomatoes
Then add about a 1tbsp of sugar (to balance the acidity of the tomatoes)
Cook until sauce reduces by half
Salt and pepper to taste
Shred 16oz of low moisture mozzarella
Assembly and Cook:
Stretch 1st portion of your dough to about 10 inches and set inside a 10in cast iron pan OR on top of pizza stone. You need a cast iron or pizza stone to get that perfect crust on the bottom of the pizza.
Pop it in a 500 degree oven for 5 minutes (without sauce or cheese)
Then take it out of the oven and apply Pizza sauce
Then put 8oz of cheese on the pizza
Then then put back in the oven for 5-10 minutes
Take out of the oven, immediately throw on some fresh chopped basil
Eat it while it's hot and Repeat for second pizza
P.s. To anybody wondering, Lodge makes really good and inexpensive cast irons, I think my 10 inch skillet was like $15usd from amazon
