It Could be. Could also be the perforating tool tearing the casing, or not allowing the sausage time to "cure" and dry in the fridge which would make them crisper and not gummy. Could be from mishandling the casing...natural thin spots or just the wild ingredients reaction to it breaking them down. I'm not a sausage expert so don't know the break rate ratio, but it seems to happen frequently. Baking them would be my suggestion...
Here's an idea: You could buy a dehydrator and make sausages out of all sorts of dehydrated ingredients. It would certainly help with things that are too watery.

Im very happy that lately when making “crazy” concept sausages that he uses meat or pork as a base. It has been bugging me since forever, of course a sausage full of nothing but taffy is going to be completely inedible.
I’m curious to know if it would’ve burst still if the sausage was boiled before cooking it in the pan? I’m not much of a sausage connoisseur, but more of an average Ordinary Sausage enjoyer.
Bursting can be mitigated a variety of different ways - patting down the ingredients beforehand, refrigerating the sausages the night before cooking, adding milk powder or some other binding agent, filling the casing slowly to avoid air pockets, etc. Of course all of that would detract from the "haha funny" nature of this channel. Chuds BBQ is a more serious sausage-making channel but also has some humor.
I think if you were to find a way to incorporate apple into this sausage, you could really work with the pork and onion flavors to make an amazing sausage.
If you attempt this sausage again, to make better carmelized onions you should add like a quarter teaspoon of baking soda as it raises the ph and aids in the chemical reaction that causes caramelization, I would also recommend using a lower temperature, it makes them really soft while keeping them from burning.
