Couple of years late, but UI Fox only ignores knockback if an AI is controlling it. No player, as far as I know, has figured out how to ignore knockback as UI Fox.

If you want a human played to be able to defeat like any character you should equip the "Turbo Mode" buddy, read the workshop description and the default mode pretty much allows everything to combo into itself. CPUs sadly can't equip buddies and even then I don't know if their AI would be able to handle it.
